What do you eat for breakfast?

I make a batch of hardboiled eggs every weekend so I have them for the week.

Boiling batches of eggs is such a good idea. I've been boiling batches of four. Each morning, I cut up two eggs in pieces, some chopped onion, two Claussen pickle spears cut into small pieces and two squirts of Goulden's spicy mustard and mix it together. It's a form of egg salad and takes under five minutes to prepare since the eggs are already boiled. I like that it 's filling, quick, fresh, and I never overeat since I make one serving at a time.

Omg I make almost the identical egg salad salad for myself for lunch - it grosses out the rest of my family, good to know I have company.

I just love it! I forgot to mention, I add a dash of sea salt and pepper. It is so tasty and crunchy, I'm addicted. I'm thinking of adding paprika next.

Whenever we make deviled eggs, I intentionally make a few extra. Chop up the leftovers and a quick stir - perfect egg salad!

I occasionally add a little diced avocado (just makes it a bit creamy) OR a dash of sriracha OR a dash of curry powder. But the "classic" (eggs + pickles + onion + mustard) is best!
