I make a batch of hardboiled eggs every weekend so I have them for the week.

Boiling batches of eggs is such a good idea. I've been boiling batches of four. Each morning, I cut up two eggs in pieces, some chopped onion, two Claussen pickle spears cut into small pieces and two squirts of Goulden's spicy mustard and mix it together. It's a form of egg salad and takes under five minutes to prepare since the eggs are already boiled. I like that it 's filling, quick, fresh, and I never overeat since I make one serving at a time.

This sounds great!

+1 I am one of those who also eats 1-2 hardboiled eggs in the morning. I don't particularly enjoy them but like the protein. I'll definitely try this!
