This is a good reason to start a new Thanksgiving tradition of having the dinner at your house. Why would you drive your family 800 miles to see a parent you don't particularly like or trust with your child? Not understanding your motivation, OP.

Actions do speak louder than words. OP, where are you for Thanksgiving? If still at your parents, why? You are considering cutting him off but if stayed, directly showed that his actions have no consequences. My GAD/untreated parent has pulled stuff like this. We are very low contact with long stretches of no contact. Just cutting him off is not enough, you need to do work to unpack your family baggage so as not to pass it on, unintentionally.

Um, your dad likely committed a crime. Tell him you are going to the police to make a report about it. Report it and ask the police to call your father and ask him to stop or else you will file domestic abuse or stalking charges against him.

I don't condone what OP's dad did, but to get worked up enough to leave and cut off communication? Call the cops? That's ridiculous.
