What kinds of fruits & vegetables did you eat today?

All because it was in a pickled side salad served with my tacos at the Cheesecake Factory, and it was so good I found a copycat recipe.

I also had some blueberries.

Would love the recipe for that if you don’t mind sharing! I love pickled vegetables but somehow never thought to make them at home.

Some frozen (berries) and some little bits in Asian noodles. Pineapple and salad were largest quantity and freshest.

Are you all snacking throughout the day on these things? I have been adding carrots as my snack but clearly I need to up my game.

For me every day would include fruits and vegetables at breakfast, lunch, snack and dinner.

I don’t snack throughout the day, but every meal and snack has a plant in it for sure. I’m a vegetarian though - all my meals are plant based. For example, my lunch was a big salad with chickpeas, romaine, cucumbers, tomatoes, avocado, carrot, radicchio and escarole. I snacked on strawberries and a sumo orange. For breakfast I had Greek yogurt topped with walnuts and blueberries with hemp hearts and chia seeds on top. I try to eat as many different plants as I can.

I'm a vegetarian, and so I eat all day, because vegetarians just need to consume more foods than non-vegetarians to get the caloric density. It's like the way an elephant does nothing but eat all day long.

I had a teeny bite of an apple and a couple bites of beans. I have IBD and cannot digest roughage wel,l and I’ll probably be paying for the little I did eat.

I hate it so much. I desperately miss the days when I could eat all the fruits and vegetables I wanted. If you can eat them, you’re so lucky! Please enjoy them for my sake

Well they're counting onions and garlic, and I doubt they mean a serving of those. Also a lot of these sound like they're in a salad. Anyway, I'm also impressed and also motivated to eat more.
