I haven't responded yet, but I realized awhile ago I really didn't eat enough vegetables. I started roasting a pan of broccoli, bell peppers, mushrooms and cherry tomatoes for weekly lunches. I heat a bowl of that up with one link of chicken Italian sausage (cut up) and buffalo sauce. Mix together and it's not bad at all, plus I get protein from the sausage.

I'm not "a healthy person", but I made a resolution to eat more plants, at least one with anything I eat. It helps, and once you get started, it's kind of a fun game.

OP here - I'm impressed! Nice job eating your fruits and vegetables, all! I am surprised so many of you are eating blueberries. Now I'm craving some!

Today: (includes what will be consumed for dinner)
Prunes
Apricots
apples
Cucumber
Avocado
Onion

Corn
Spinach

1 grapefruit
1 container of raspberries

For dinner probably:
cherry tomatoes
baby spinach

I'm too lazy to combine or chop up lots of foods, so I tend to eat larger quantities of a small number of things.

Breakfast upon waking: 1/4 cup walnuts, 3-4 baby carrots, 12oz green tea = 3 plants

Mid morning breakfast: slice of spinach, sun dried tomato and garlic quiche with red pepper flakes and herbs, side of rosemary roasted sweet potatoes = 11 plants

Late afternoon dinner: chicken and vegetable curry (onions, tomatoes, sweet peppers, garlic, kale, black chickpeas, chilis, spices) over brown rice = 17 plants

Snacks: apple, banana = 2 plants

Daily total = 33 plants

Really? How is that list not a detailed answer to what kind of fruits and vegetables did you eat today?

Because poster included grains and herbs? Those are plants which feed the gut biome and should be counted in the daily equation of diversity of plants being consumed.

While I know not all the participants here are in the DC area, I will say I feel fortunate to have access to a lot of good quality produce around here. I’m in city of Alexandria and we have our specific places for specific produce and fruit and it works well. It is a pain in the ass if you go through a lot of it, but still the juice is worth the squeeze so to speak (I don’t make any juice).

When counting plants, does quantity matter? Like a few pieces of green pepper or mushroom in another dish like pasta? Or does it have to be a certain serving size to “count?”
