What kinds of fruits & vegetables did you eat today?

I don't know what others do, but I tend to think, eat, and list in terms of full servings because it makes my life simpler. For example, today I ate of those mini cucumbers and a mandarin with breakfast (whole wheat toast w/vegan butter). But I have been dealing with IBS and my Dr says I need to "diversify my gut microbiome" so I'm intentional about it all and focus on the rainbow each day.

Banana this afternoon and broccoli with dinner.
That’s it.
Occasionally I get more in but this is pretty typical.

Almost identical day today. Except some lentils got switched out. Zucchini and cabbage got dropped. Colocasia leaves and coconut got added. Mango and dates got dropped but figs got added.

This is fun. It just makes you aware to eat the rainbow.

Grocery bills are probably the same or less. The more veggie, fruits and lentils/beans you eat the less $$$ meat you are eating. Plus, we try not do the kits or prepped produce or fruit plates. Most of the times we are buying whole veggies and fruits and washing, cutting and preparing it ourselves. My DH, I and the kids - all of us can cook.

Yes, I listed all the produce I add to the recipes. Onion, tomatoes, ginger, garlic, cilantro, mint, green peppers, coconut etc. Your gut biome needs lots of variety and your palate needs a lot of variety to become an avid vegetable and fruit eater.

I'm the PP you're responding to. We spend about $150/week for 4 people. We aim to buy one meat a week, so that's not a huge cost, and we don't buy precut. For us more veggies tend to replace larger servings of grains, which are cheaper.
