They are eating less grains and meat because they are full on healthy, vitamin and fiber rich vegetables.

I am a vegetarian - I eat a LOT of veggies and fruit, and also eat a lot of carbs. I am not full without some carbs and often cheese. But I do try to fit veggies and/or fruit into just about everything I eat. Just always looking for ways to get more - I have a thing of prewashed arugula and stick a handful of it into all my pasta, sandwiches, soups, etc etc.

Yesterday I had strawberries, a banana, chickpeas, arugula, tomatoes, black beans, and some blueberries on top of ice cream. And also rice, cereal, crackers, and bread,

Usually I eat more veggies than this but it was a bit of a weird eating day.

Not great, but sadly pretty typical for me.

I usually eat eggs and toast for breakfast, so that's whole meal with no fruit/veggies.

Are a lot of the veggies in these long lists things that are just part of a recipe? Like, not a full serving? Cause my list would be a lot longer if I included things like garlic and fresh herbs and the onion, carrot, celery in a soup recipe.

Friday: blueberry, apple, various herbs and onion, lettuce, tomato, peppers, onions, carrot, celery, olives, hearts of palm, garlic, cucumber.

Yesterday: arugula, kale, butternut squash, red pepper, onion, brussels sprouts, apple, apricot, banana.

Today so far: cranberry, lettuce, tomato, lemon (planning on more lettuce, tomato in various forms, avocado, onion, cilantro, bell peppers, jalapeno, lime, corn, and garlic).

I eat far more fruits and maybe a few more veggies in the warmer months.
