Exactly. It was inconsiderate of his sister and the work she has put in. He should have 1. Asked, not told 2. If sister agreed to additional guest advise that HE would be preparing something for gf as she has special dietary requests. |

I'd do a vegetable stir-fry with some of the vegetables you have. If you have rice, add that, otherwise stir in some cooked pasta.
I make a quick sauce with soy sauce, rice vinegar, sesame oil, sugar and chili-garlic sauce. You can also add some fruit salad or a green salad with citrus and a sweet dressing, that should hold anyone a meal. |

This could work. Don’t sweat not having that she is just leave it out. You could also chiffonade the kale to add a green element. Or roast the Brussels and eggplant, drizzle with balsamic glaze. Serve over steamed kale, broccoli, green beans or roasted potatoes. |

| Wow OP, you've got a lot, that's great! How about just chopping up the harder veggies and roasting with oil and herbs, if there's room in the oven? There's also a lot you can do with eggplant, murshrooms, and tomatoes, like pasta or an eggplant dip, or marinated mushrooms or mushroom bruschetta. Or you could make imam bayeldeh if you have onions and olive oil. I get that time is scarce and you probably don't want to do a lot though, I'm sure she'll appreciate anything you have time to throe together at the last minute (she'd better!) |
OP knows and doesn't like this woman. If she met her/ate a meal, she probably knew GF was a vegan. |

I would set out apples and peanut butter if you have it as an appetizer if others are doing things they can't eat. A salad, dressing and cheese on the side if you were going to use those for other people. Roast some veggies with olive oil and salt. Bake a potato Some strawberries maybe with a sprinkle of powdered sugar to look festive for dessert |
Bake the potatoes. Do roasted veggies with tomato, onion, brussels sprouts, mushrooms carrots and egg plant. Done. Toss in oil and balsamic with some seasoning and done. |

Um, so? I have a vegan cousin but am not prepared to host her on Saturday on account of she’s not invited to my home on that particular day. If she asked today if she could come for Christmas Id say sure but you’ll need to bring food. |
