I made the How Sweet Eats banana cake the other day and my kids devoured it. She makes hers with coffee icing but my kids like cake without icing so I didn’t add that but the cake was very moist and delicious.

Trying not to eat heavy and to keep healthy, so today is a fennel/beet/orange salad.

Trying a new recipe every day and eating vegan 2 days a week and vegetarian 2 days a week.

I made jalapeño cheddar cornbread to munch on. Just took a box of jiffy cornbread mix and made according to directions and added about two tablespoons of chopped pickled hot jalapeños and half a block of shredded sharp cheddar. It was so good! Easy.

Remaking these cookies today. They were beyond awesome (and we don't do gluten-free stuff normally)!! Costco is selling almond flour and really good quality madagascar vanilla. Very simple and quick to make and utterly delicious. You can also eat the dough...because it tastes like a wonderful halwa..

Instapot yogurt. Never made it before...

My mom's throwback Chicken Vermouth:

3/4 cup dry vermouth
1/4 cup soy sauce
1/4 cup vegetable oil
2 T water
1 T brown sugar
Few dashes of oregano

Mix together, pour over 6-8 pieces chicken in a baking dish. Marinate for a few hours, turning every now and then. (I used drumsticks as they were what we had.)

Bake at 350 for about 45 minutes, turning the pieces every now and then. Delicious!

Made a squash casserole as a side dish last night with marinated skirt steak. It was so delish, cheap & easy.

Slice assorted squash & zucchini and cook with olive oil & some butter over medium heat. Put in casserole dish. Combine breadcrumbs, parm cheese & cheddar cheese with some melted butter and place over squash.
Bake for 35 minutes at 350.

Any suggestions for a vermouth substitution?
