I'm trying oven roasted pulled pork tonight for sandwiches and making a German potato salad.

We've done this one a lot (so not new to our family) but this is an amazing dish (spicy and so good)

I am dumping a can of cream of mushroom soup over some pork chops in an instant pot bc my food will match my mood.

If you have leftovers, I used half a tub of spinach artichoke dip to make sauce for pasta with chicken. Added a can of artichoke hearts.

I'm planning to make a crock of kimchi with a bag of watermelon radishes and slice and dry some apples that were too mealy to really enjoy.

I just finished making this for today. Enough for lunch and dinner...

I have been following this recipe as a base recipe for veg biryani for a loooong time ( I only watch the last few minutes as contains a quick synopsis) and made some slight modifications. Don't get intimidated by the amount of spices used. Use whatever you have available. This is a ridiculously easy and fast recipe, especially if you use a microwave also. And most people think that you have slaved over it.

You can serve a raita or a simple salad with it. It does not require any accompaniments. TBH. And it is a great way to get rid of small quantities of veggis that are left over.

- Add curry leaves also when making the veggi spice base.
- I add finely chopped lemon peels (after removing the juice from the lemons) to the cooking rice. The cooked lemon peels in the biryani gives an amazing flavor to the whole dish.
- My kids don't like carrots in this dish, so I did not add carrots. I added some craising and toasted cashew nuts, in the last few minutes of cooking.
- In a pinch, use pre-fried onions from asian and indian stores.
- Another shortcut is to half cook the veggis in the microwave and then mix with the masala.
- Saute some interesting and colorful veggis like bell peppers separately and incorporate it when you are serving the biryani. It leaves brilliantly colored bits of veggies in the biryani.

I even added an overripe pear in it today, along with toasted walnuts. If you add a lot of fruit you will need to bake for a longer time. Thankfully, my kids devour it and so it does not sit around for too long.

Yesterday, dinner was Costco frozen cheese tortellini with alfredo sauce. I sauted onions, garlic, finely chopped baby spinach, 1/2 tsp minced sundried tomatoes, 1/2 a can of artichoke hearts before adding the sauce and tortellini. A dash of fresh ground black pepper was all I needed for it to smell, taste and look amazing. If I had a leaf or two of fresh basil it would have been fantastic...but I am out of fresh herbs right now.

Tomorrow -
I will boil potatoes to make mashed potatoes. We will have IKEA frozen meatballs, gravy (from their gravy packets) and lingonberry jam.
I may also make some buttery garlic toast to go with it, for the kids. DH and I will stick to a small salad (tomatoes, cucumbers and some olives)
