Not today but yesterday I tried out this Snickerdoodles cake recipe for my son’s birthday. It didn’t look nearly as pretty but it was pretty good.

Made Irish soda bread this morning. Meh. Didn’t stop me from gnawing on the crust with butter mindlessly but I wasn’t that impressed.

Have shortbread crust lemon bars from Sally’s Baking Addiction in the oven for Easter dinner dessert. Family loves lemon.

I made this last night. I’m not picky but this was pretty bad. I froze most of it to maybe add to pasta sauce or something.

So lucky. We have to cook gluten free and it always require alot of thinking and craving for breads we can't eat. I just want something simple.

I had a hunk of gorgonzola so made penne with gorgonzola sauce.

Broccoli crunch salad. It was time to use up the broccoli I bought last week: I sautéed the broccoli with the shallots instead of grilling, but I think grilling would taste even better. Also used balsamic vinegar that I had in house nstead of apple cider vinegar. It was good, not amazing.

I am sorry, I know that makes things harder. Someone posted a good looking gf cookie recipe upthread, as well as a few gf soups (or ones that could easily be tweaked to be gf).

Tried the NYT’s Red Lentil Soup with Lemon (Melissa Clark) yesterday and it was both easy to make and truly delicious - everyone in my meat-loving family really liked it. Will definitely make it again soon.

Burritos stuffed with cooked ground lamb with homemade seasoning, cooked pinto beans with chorizo, cheddar cheese and chopped onions. Then dunked into a savory sauce made with the liquid from the beans/seasoning/fried onions/bit of bacon. Baked. Topped with a generous dollop of sour cream, and a fresh salsa of onions, tomatoes, minced cilantro, sheshido peppers, lemon juice and salt.

It was absolutely amazing.

Vegetable pakora in my air fryer. I have chickpea flour, rice flour and fresh curry leaves. Plus vegetables of course. Never tried to make them before, so it could all go horribly wrong and then we’ll have to eat frozen pizza.
