Is picky eating a deal breaker

Not necessarily. I had a co-worker who had a very limited diet that consisted of only processed foods. He distrusted anything not prepackaged. No vegetables or fruits ever. He was pasty white, soft, and overweight. I know another person who has very bland tastes and limited palate and she is very overweight.

How is it shallow?

Last time I checked, human beings have to eat everyday, multiple times a day. Most people don't want to play short order cook every dinner to accommodate a limited palate. Most parents want to teach their kids to eat a healthy diet with a wide range of foods, appreciate different cuisines, etc. It's hard to do that when one parents doesn't eat vegetables or won't eat foods from other cuisines that falls outside a limited list of things they will eat. Like most picky eaters, they'll probably make their disgust clear.

This is an issue that literally affects the minutiae of everyday life. It's going to get old really fast. It's actually irresponsible to not think about whether you can live with this characteristic in a life partner.

Not for me, but it is OK if it is for you.
If trying new foods and restaurants is important for you to share with a partner, then yes, this is a dealbreaker.

I'm sure it does bother him. He just doesn't say anything about it, yet.
