Um. Caviar lentils. Maybe? Cooked according to package but in chicken bone broth instead of water. Added salt, onion powder and garlic powder while simmering. Threw in a big pinch of shredded Parmesan after draining. It was quite good.

Mushroom burgers with red onion (whole slices and grilled) with arugula and a vegan mayo spread made with canned red peppers. Good stuff.

Giant had an excellent sale on blueberries last week - $1.99/pint! They're on sale this week, too, but not as deeply discounted.

Sliced cucumbers, chopped green onions, feta cheese, salt, and a lot of black pepper

Medium sized tomatoes, tops cut off, drizzled in olive oil and balsamic vinegar, with salt, pepper, garlic powder and Italian seasonings, roasted in air fryer

Mixed greens, arugula, cherry tomatoes, artichokes, shaved parmesan cheese, red wine vinegar, salt/pepper to taste
