On the food board, I found a recipe/suggestion for a very simple lentil salad, based off one published on the smitten kitchen website.
It's basically a package of Trader Joe's precooked lentils, mixed with a jar of their bruschetta dip. You can switch it up however you want. I added some lime juice and cilantro. It's very good and a nice, inexpensive lunch option. It would be great atop salad greens. |
If you have an air fryer, roasting the chickpeas in there really makes them next level. |
Speaking of chickpeas, this was great. I used “fresh” chickpeas made in the instantpot because I prefer that to canned. But either will work!

My wife wants to try and do flexitarian, but no animal products specifically during the week. Today she made some black bean burgers with tomatoes and onions and a chipotle sauce. I had a big salad as well. Definitely enjoyed it. |

The butter part isn’t healthy, but I’ve been gorging on the incredible fresh artichokes the stores have been carrying. Can’t get enough! It’s been lunch nearly every day. |

Instead of ice cream, I put 1.5 cups of frozen triple berry blend and pour .5 cups of fairlife chocolate milk over it. Crush it up a bit. It’s a nice sweet treat. |
We have been eating tons of strawberries. They seem to be especially good this year. Tonight we also had fresh corn on the cob that was terrific. |
