I’ve made a variation on an arugula salad with an amazing lemon dressing and a sprinkle of Parmesan cheese several times this week. It’s been a nice change from my usual salads and felt great for spring.

Anything a little special or different but healthy you have been enjoying recently?

I made tofu japchae last night.

Bell peppers, shiitake mushrooms, onions, jalepenos and marintated tofu (soy sauce, sesame oil and black vinegar) stir fried with bean thread noodles. Pretty great and hit the takeout craving spot.

Greek shrimp with feta. I served it over brown rice.

Smoked salmon, red onion and avocado on rice cakes for lunch, with everything seasoning. Squeeze of lemon and some dill if you’re feeling fancy.

Endive leaves spread with a bit of allouette spread, an apple slice, and one crumbled homemade sugared walnut each. Also, Heirloom tomato salad with basil and mozzarella. I know the cheese might make these two things a bit less healthy, but these are both an improvement from my usual choices!

Marinated roasted mushrooms. I can eat a whole tray of them.
