I made this deconstructed falafel salad (twice, actually!). I skipped the pita chips.

Gross

I taught my kids to be more polite when they were in preschool.

Seriously. I was all happy to embark on reading people’s ideas and right on the first page, here’s the rude one, right out of the gate. Why so mean? And also, weird. This may not be to a particular person’s taste, but there’s nothing “gross” about it. It’s not a sardine milk shake, for goodness sake.

Have a vegetarian kiddo and make some bowls weekly that everyone likes :

Asian rice bowls-
Chicken pineapple meatballs
Salmon
Jasmine rice
Cucumber/ rice vinegar salad
Edamame

Black bean rice bowls-
Same as above sub chicken for meatballs and salmon
Black beans with cumin
Sweet potato cubes
Avocado
Pickled red onion

Black bean/ beet veggie burgers

Arugula salad with either blueberries or strawberries and goat cheese with some sugared pecans. Meat eaters will add steak o chicken and I usually do a rustic bread along side.

Looks good. Had to click on it. I really like falafel so for me, deconstructed would be making the felafel and serving it on lettuce/cucumber with tsziki. Is that healthy? Not sure.

I made vegan bolognese with lentils and mushrooms. The only sub I made was pre-cooked brown lentils instead of the uncooked red lentils. Yum!
