I made a great salad with baby greens, chopped sweet peppers, minced white onion, avocado, carrots, celery, parsley, dried basil, and oregano. Homemade dressing of olive oil, lemon juice, sea salt and cracked black pepper.

Olive oil, balsamic vinegar, soy sauce, garlic, brown sugar. 400 degrees for 15 minutes. Sooooooo good.

Its from a Mexican cookbook I bought years ago. The interesting ingredient is a corn tortilla to thicken the soup...rip it up in small pieces and puree. Gives the soup an interesting flavor.

Made a delicious salmon (https://therecipecritic.com/garlic-brown-sugar-glazed-salmon/) Monday night, had leftovers on my spring mix salad the next 2 days, no dressing needed.

Shrimp, zucchini, bell peppers sautéed w/ carnitas rub (I know sounds weird but good). Kids and hubby had with brown rice, I had with salad.
