OP here and I’m really grateful for these great suggestions! I’m adding mushrooms and the ingredients for the other arugula salad to my grocery list. Will also need to make time to track down some fresh strawberries/ my favorite! Thanks guys!

It’s sounds delicious, but I wouldn’t count that much olive oil as healthy. That’s more fat than a big pile of fries.

I made a delicious salad with romaine lettuce, half a can of chick peas, sliced avocado, red onion, cilantro, little drizzle of olive oil, juice of 1 lemon, salt and pepper to taste. So good!

No it’s not. It makes 4 servings and also, fat (especially from olive oil) is not unhealthy, if it’s part of a balanced diet. That gazpacho sounds wonderful!

Shelling peas, from the farmers market, straight out of the pod. I thought I hated peas - turns out fresh ones are delicious!
