Share something delicious but very healthy you ate this week

Sliced avocado with salt and vinegar. I two bananas today. Poaches egg. All very, very delicious and very healthy.
Also, bowls of blueberries and strawberries. I literally eat them like one would eat a soup/salad with a spoon.

No it’s not. It makes 4 servings and also, fat (especially from olive oil) is not unhealthy, if it’s part of a balanced diet. That gazpacho sounds wonderful!

It’s actually 8 servings, and delicious without the garnish of extra oil. So around 1.25 T oil per serving, and no other fat.

Had a Cobb salad when I went out to lunch and forgot how good they are. Spinach, hard boiled egg, tomato, avo, cucumber, shredded carrot, sprinkle of blue cheese, whatever dressing you want (I made a Greek yogurt ranchy one)

I had leftover grilled portabello mushrooms from dinner and made the most delicious sandwich for work the next day. I toasted sourdough and put the portobellos with hummus, red peppers, feta, and arugula and a little drizzle of balsamic. It felt so gourmet compared to my usual work lunches.

Smoothie protein bowl: frozen blueberries, fresh spinach, chia seeds, protein powder. topped with homemade granola.

Love warm weather eating! It’s smoothie season and this morning I made smoothies for breakfast: banana, blueberries, frozen mango and frozen spinach, a heaping portion of nonfat yogurt and water, blended. Very good!

Yum. Dinner solved, thanks. Trying to decide if I’m going to add bacon. What would be a good bacon substitute? Maybe some chopped smoky almonds….

salmon, spread with dijon, top with everything bagel seasoning. Grill ~15-20 minutes.

Served with ceasar salad and white rice.

It was oddly good to mix it all together but if you need to be "more healthy" just the salmon cooked that way is amazing.

Everything bagel seasoning is my favorite way to make healthy stuff taste good.

I made these bowls last night:

Spinach
Couscous
Cherry tomatoes (quartered)
Cucumbers (diced)
Red onion (chopped fine)
Chicken (seasoned with garlic, onion salt, salt and pepper, then pan fried in a small amount of olive oil, then chopped)
Tahini dressing (tahini, lemon juice garlic, salt and pepper)

So delicious, very easy, and pretty darn healthy. We'll have it for leftovers tonight as well and that's even better because I won't have to cook anything.
