Just tried this one tonight for 1st time. Got it from the internet. I didn't plan dinner, and only thing defrosted was ground beef. I liked it - cross between sloppy joe and a burger. And the best part was it was so easy and quick.

Ingredients
1 pound of ground beef
1 loaf of French bread
2 tablespoons of butter, melted
1/4 cup of ketchup
2 heaping tablespoons of sweet pickle relish
2 teaspoons of Dijon mustard
10 turns of the pepper grinder
1 envelope of dry onion soup mix
1/2 cup of beef stock (try lower sodium here)
Chopped onion, chopped tomato and shredded lettuce, or optional toppings for garnish

Instructions

Cook ground beef in a medium size skillet over medium heat. Split the French bread in half lengthwise and brush cut side of bread with the melted butter; grill or toast in a skillet. Brown the ground beef until cooked through, breaking up to a fine crumble. While meat is browning, in a separate small bowl, combine the ketchup, sweet pickle, mustard and pepper. Add the onion soup mix to the ketchup mixture and stir together well.

To the browned ground beef, stir in the beef stock and the ketchup mixture; bring to a boil. Reduce heat and simmer until heated through well. Spread the meat mixture over the bottom half of the toasted French bread. Top with chopped onion, tomato and shredded lettuce, or other toppings as desired. Top with other half of the toasted French bread and cut into serving slices. Serves 4, or 2 really hungry adults.

Note: I used Lipton Recipe Secrets Golden Onion soup mix. Some brands of beef broths and stocks can be pretty high in sodium, and in combination with the packaged onion soup mix, might be more salt than you like. A lower sodium broth would help to decrease that. To toast bread in the oven, preheat oven to 400 degrees F. Place the bread into the preheated oven for about 5 minutes per side, cut side up first then down, until lightly toasted and crunchy.

Brown the ground beef, sauté the onions&celery (and green pepper if you're willing to go over 5 ingredients), and boil the noodles or rice. Mix it all together with soy sauce to taste. My Mom made it when I was a kid.

Quick stuffed peppers

Bell peppers
Ground beef
Lentils
Canned tomatoes
Feta

Brown the ground beef in one pan and cook up the lentils in another. Take the innards out the peppers and combine the cooked beef, lentils, and tomatoes together and stuff the peppers. Line them up in a baking pan with a little water in the bottom and cover with foil. (not sure if the foil step is necessary) Because I'm not a talent on the kitchen, I have to guess the oven cooking time. I usually start at 350 and check them frequently until peppers are soft. Top with feta before serving.

I forgot to add that sometimes I skip the lentils and use rice instead. Depends on the mood.

This is my go-to recipe during the week. My 4 year old son loves it - which is a huge plus...

package of broccoli slaw (in the prepackaged salad section)
1 pound of ground turkey
thinly sliced onion
1/3 cup chicken stock or water (just enough liquid to create steam)
about 2 teaspoons of sesame oil
tablespoon of soy sauce
Optional - chopped garlic and/or ginger

Saute onions in olive oil. if adding garlic/ginger, add once onions are soft. Once fragrant, add ground turkey.
Once turkey is cooked, season with salt/pepper to your liking. Then add the package of broccoli slaw and water/chicken broth. Cover and let steam about 5-8 minutes or until the broccoli is tender but still has a bit of bite to it (however you want it). Take off the heat. Add soy sauce, sesame oil and stir.

We usually serve with rice. Hubby likes to add Siracha sauce and extra soy sauce.

Here are two of my current go-to two fish dishes. Not including side dishes (usually bread or rice and a green vegetable), they both have 5 ingredients and can be whipped together in less than 20 minutes.

Mediterranean Inspired Swordfish

handful of kalamata olives, chopped
couple tablespoons of capers
handful grape tomatoes, chopped
couple garlic cloves, smashed
swordfish steaks

Gently saute in olive oil while you grill swordfish steaks. Remove garlic cloves from topping. Spoon over top of swordfish portions. Serve with bread, rice, or couscous, and a green veg. (If you have fresh basil, use that and/or a few red pepper flakes in the sauce.)

Butter-Caper Sauce

butter
capers
white wine (optional)
flounder/dover sole or other delicate white fish

Melt a tablespoon or so of butter in a skillet. Cook flounder (dover sole) on medium heat for about 8 minutes. Remove fish from pan and keep warm in oven. If you have open white wine, pour a splash into the skillet and reduce. Add a couple more tablespoons of butter and a couple tablespoons of capers. Whisk to make a sauce. Spoon over the fish and serve with green vegetable.

A comfort food side dish we call "adult macaroni and cheese"

orzo
chicken broth
parmesan
salt
pepper


cook half a pound of orzo using chicken broth instead of water. when done, drain off any extra liquid. add lots of shredded parmesan, stir until melty. salt and pepper to taste.

this is really simple but surprisingly tasty.

Smear & bake! Make sure to broil a couple minutes until top is lightly browned

Nice spice options include salt, pepper, chives or tarragon or browned shallots

This is shameful, but...

Super fast chicken parm

Breaded frozen chicken tenders
Pasta
Jarred sauce
Mozzerella
Parmesan

Just bake tenders until done, then add a mix if cheeses and melt. Serve over pasta and sauce.

Cook rice your usual way (boil, rice cooker etc)
Dice the chicken

per lb of chicken add 1-2 Tbsp oil, 1 Tbsp brown sugar, and 1/2 Tbsp garlic to pan (frankly I eyeball it and tend to use more garlic)

When sugar melts add the chicken - when chiicken is white on outside add salt to taste

Cook until sauced is carmelized, medium brown and fairly thick.

Add rice to pan.

It tastes a lot like chinese chicken and broccoli and therefore if you want a 6th ingredient mix in some steamed broccoli.


You can also use pork instead of chicken.
It is really quick to make and my son loves to help stiring.

Easy chicken wings

Mix 2 tbsp of soy sauce with 1 tbsp of honey 1 tbsp of olive oil and 1 tbsp of lemon juice dump into a ziplock bag add chicken wings and shake well then place on a cookie sheet lined with parchment paper dump the rest of the marinade over the chicken bake at 450 for about 25 minutes

cook the sweet potato, mix with cheddar cheese. Wrap mashed potato/cheese mixture with black beans and some goat cheese into tortillas. sprinkle cheddar on top, bake at 325 for 20 minutes. YUM!
