Penne with Sundried Tomato Pesto

12 ounces penne pasta
1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil (Trader Joe's has a good one)
2 garlic cloves
1 cup (packed) fresh basil leaves
1/2 cup freshly grated Parmesan
(it's not in the original recipe, but I also add pre-grilled chicken from the deli case)

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.

Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan.

Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

Broccoli soup

6 cups chopped broccoli (about 3 crowns)
2 med potatoes, peeled and cut in chunks
1 red onion, quartered
7 cups water
1/4 - 3/4 cup heavy whipping cream
1-2 tsp salt and Freshly ground black pepper

Simmer first 4 ingredients, uncovered, for 45 mn. Turn off heat and purée. Stir in cream. Add freshly ground black pepper.

This is great with garlic bread.

Boneless skinless chicken breasts
Swiss cheese
Cream of chicken soup
Bread crumbs
butter
Put chicken in pan, cover with the cheese. Mix soup with water or milk, pour over chicken. Sprinkle with bread crumbs, dot with butter. Bake at 350 for 45 minutes. I serve it with cranberry sauce.

Grill steak to desired doneness, salt and pepper to taste. Serve with bread/fries/rice and veggies, also salted/peppered to taste.

Frozen chicken breasts
Baby carrots
BBQ sauce or other marinade (we like orange teriyaki glazes)

Throw in crock pot. Cook until chicken falls apart. About an hour before dinner, make rice (great with the sauce) or potatoes.

Thanks for the shrimp, tomato, feta recipe. I made it but used 2 pints grape tomatoes as called for in the Southern Living recipe. I sort of combined the two recipes and it was fantastic.

plain greek yogurt
garlic powder--about a tsp
seasoning salt--to taste
pepper

Mix ingredients together, spread over chicken breasts, bake at 375 degrees for 45 mins.

Cook rice your usual way (boil, rice cooker etc)
Dice the chicken

per lb of chicken add 1-2 Tbsp oil, 1 Tbsp brown sugar, and 1/2 Tbsp garlic to pan (frankly I eyeball it and tend to use more garlic)

When sugar melts add the chicken - when chiicken is white on outside add salt to taste

Cook until sauced is carmelized, medium brown and fairly thick.

Add rice to pan.

It tastes a lot like chinese chicken and broccoli and therefore if you want a 6th ingredient mix in some steamed broccoli.


You can also use pork instead of chicken.
It is really quick to make and my son loves to help stiring.

Add a bit a sesame oil, ginger and white wine to the chicken sauce. Yum.

19:45 do you cook the chicken first? and when you say swiss cheese do you mean slices, as in one on each breast?

Grape tomatoes
Olive oil
White wine
Garlic
Basil
Angel hair or capellini

Cut tomatoes in half and throw in a Dutch oven with chopped garlic (amount to your taste). Pour in about 1/3 cup olive oil and 1/2 cup wine- eyeball it, you want the ingredients wet but not swimming. Salt and pepper ( not including those as ingredients, they don't count!) and cover and put in a 400 degree oven for 35 minutes or til tomToes are soft and split. Pour onto pasta and top with fresh basil and parm. (Okay that puts me at 7 ingredients. It's still easy.)
