OP here. One of the reason why I don’t make or buy potato salad is that my husband and I both dislike mayo. This could be a potato salad that he would eat.

I can still get the store bought or restaurant version as a backup for the people who are coming who requested potato salad. I think they are into the traditional mayo based kind.

So the dressing is essentially egg free mayonnaise?

I don’t know about German potato salad, the cookie and Kate one is olive oil, lemons juice, herbs, mustard whipped into an emulsion

So, spicy mayonnaise. I think there are quite a few closet mayonnaise lovers here.

That is definitely not mayonnaise. If it doesn’t have eggs it’s not Mayo.

Heidelberg Bakery has the best German potato salad. No mayo. I have to go get some this week now.
