I'm on board. Any "salad" that contains mayo, egg, and onion as main ingredients is gross and low class.

You can make good potato salad with good ingredients. But good farmers market small potatoes, veggies, higher end mayo, and lots of fresh herbs aren't exactly cheap. And the outcome is never that good, so why bother?

OP here. One of the reason why I don’t make or buy potato salad is that my husband and I both dislike mayo. This could be a potato salad that he would eat.

I can still get the store bought or restaurant version as a backup for the people who are coming who requested potato salad. I think they are into the traditional mayo based kind.

I appreciate all of the suggestions!

Yeah OP I know that you have a hunch that these people prefer the Mayo kind, but I don’t know anybody who doesn’t like German potato salad and lots of people who hate the Mayo based one. I love all kids of potato salad but german potato salad is out of this world.

I agree with the Red Hot & Blue suggestion. It is so delicious.

Ina Garten has a recipe for a French potato salad that uses champagne vinaigrette that is also superb.

Both of these options, plus German potato salad, are worth the effort and calories. The rest, not so much.

I was recently at a BBQ and they had something called baked potato salad from Costco. It looked like vomit in a big plastic tub. No thanks. Please don’t serve this to people you like.

French potato salad using the Joy of Cooking recipe is what you want.
