Thank you for sharing! I'm making this tomorrow. |
Love this, thx!!! |
| Make a paste of olive oil, salt, fresh chopped thyme and lemon rind. Out past on salmon and bake until medium, about 7 minutes. |
| I do Mediterranean Salmon often. Take salmon out of fridge 30 minutes before prep to let it get to room temp. Rub olive oil, salt, pepper, oregano, lemon on . Broil for 8-10 minutes. Serve with topped with plain greek yogurt/tzatziki if you would like |
Yummy. |

Tortilla casserole...
In a pie plate layer a little salsa, a flour tortilla, mashed black beans or refried beans, cheddar, salsa. Continue layering with a total of 4 tortillas. Top with a little extra salsa and cheese. Bake about 40 minutes. You can also add to the layers thinly sliced and waited peppers, onion, corn...any veggies you like. |
Oops, that's *sauteed* peppers and onions. |
This sounds like a yummy idea. But, I would not consider it a quick recipe. In addition to the time needed to make the batter, add 5 minutes to fry the pancake on both sides. It is similar to Korean style zucchini pancakes. |

here's a quick salmon recipe.
marinate 1 lb salmon in a combination of 2T olive oil, 2T soy sauce and 1-2 T dijon mustard. Add some grated fresh ginger and/or chopped garlic to the marinate if you wish. Marinate for 15 minutes. Grill for about 3-4 minutes per side or cook in a skillet for 5 minutes per side. Let rest 5 minutes - serve with rice, edamame. This was based on a recipe I saw once from Ina Garten's show and I make it at least twice a month - everyone seems to like it - even the kids! |

Roast whole chicken with red potatoes, sweet potatoes, apples & onion.
Preheat oven to 500. Chop veggies. Toss with oil & S & P. put in roasting pan. Pat down chicken with paper towels inside & out. Rub with oil & S & P. add to roasting pan, breast down Turn oven down to 400, chuck it in. After 45 min, flip it breast up & cook another 45. Not fast, but so so easy & definite crowd pleaser. Bonus of delicious leftovers. |
Actually, most of these recipes are perfectly fine from a caloric/nutritional standpoint. I might avoid the alfredo sauces personally and switch the 2 fried eggs to 1 if they are being eaten on a regular basis.....I tend to think this is what you are referring to..... but really the rest of the stuff seems fine. Totally not crap....and even the occasional bit of msg-ified chicken broth won't kill you if eaten in moderation. Keep cooking fresh food for your families. It's the best thing you can do! |

Microwaved (or oven roasted if you have the time) sweet potato + black beans (canned) + cheddar cheese (pre-shredded) + salsa (optional)
Serve with a side salad or steamed green veggie. A super easy meal that can easily be deconstructed for picky toddlers. |

Salmon with marmalade (bake salmon with a layer of citrus marmalade on top - sounds weird but turns out yummy)
Boneless chicken breast pounded flat. Sear in pan 4 minutes per side. Can cut into pieces and add a sauce and veggies of your choice for a stir fry. or just serve with veggies. Philadelphia cream cheese brand makes a range of cooking sauces that are pretty good. I also sometimes do half soy, half sriracha sauce and egg noodles. I also make an enchilada pie similar to recipe above (layer of enchilada sauce, corn tortillas, black beans, veggies (I usually do spinach, zuchini and/or corn), cheddar cheese. Then repeat layers until pan is full. I also add jarred jalapeño to the too of the cheese since we like spicy. Oh, and turkey tacos. Brown ground turkey meat with taco seasoning package. Serve in pre- made taco shells with cut up lettuce, tomato and salsa. |
I think quick is your frame of reference. Personally I do not use ingredients like condensed soup in my cooking so thins kind of recipe would be quick. For someone unaccustomed to a stove this might be a challenge. |
Good god, I'm such a food snob! |
