It's hard for me to even call this a recipe - more like semi-homemade. Super quick and easy. But, everyone loves it and I get requests from my ILs to make it when they visit.
Cook 1lb spaghetti In a skillet, saute 10oz sliced mushrooms (white button or baby bella) in a little olive oil. Season with salt and crushed garlic. When mushrooms are cooked, add a bag of baby spinach and pour a jar of store bought Alfredo sauce over the vegetables. Once heated through, pour sauce over cooked pasta. That's it! |

Mediterranean Turkey Burgers:
Sautee some spinach. (And half an onion if you want). Mix in with 1lb of ground turkey and 3/4 cup of feta cheese. Salt, pepper, oregano. Grill. Serve in pitas with lettuce or spinach, tomatoes, a sprinkle of feta and tzatziki sauce. My kids and husband love. All guests I've served it too love also. |

Does the crock pot count?
If so, I put chicken pieces (breasts work, legs and thighs are better) in the crock pot in the morning, add a bottle of BBQ sauce and 1/2 cup of water. Simmer all day in the crock pot unattended on low. Serve with rice, corn or cornbread. Very easy and crowd pleasing! |
| Box of angel hair pasta, three large heads of broccoli, saute it in Thai peanut sauce, mix together. Done. |

Taco salad. Brown some hamburger & add a can of black beans. Season as needed.
Add your favorite taco toppings to lettuce, top with crushed tortilla chips. It so simple, but everyone gets so excited about it. My kids will ask for it every week. |

Frittata:
(This is my go to recipe whenever I have <30 minutes to make dinner and haven't necessarily bought ingredients). Turn on the broiler. Heat a little olive oil in a frying pan. Chop up a chorizo sausage and add to the pan, then add whatever veggies are on hand (broccoli, asparagus, mushrooms, peppers are all good; frozen veggies work too) and saute for a couple minutes. Whisk together 5 eggs, a splash of milk, and a handful of shredded cheese. Dump into the stuff already in the frying pan and cook until the bottom is firm, occasionally lifting up the edges to let the uncooked egg get to the bottom of the pan. When it's mostly cooked through, pop in under the broiler for 1-5 minutes until the top is browned. Both my husband and kids gobble this up (I push the spicy sausage and any offensive veggies to one side before I add the eggs for my kids). You can add whatever you like, but the sausage makes it delicious. Often I'll add onion and or garlic before the other veggies. |
| I use Hard Time's Cincinatti style chili mix. I had a can of pumpkin puree. It takes 40 minutes and keeps us feed for many meals. |
| Cook 2 cups of dried macaroni. While that's going, saute a chopped onion and 1 lb of ground beef. Mix in a can of rotel, a can of diced tomatoes, a cup of frozen corn until hot through. Add the macaroni and a cup of grated cheddar. |

Reuben Casserole:
spray dish, oven at 350 layer accordingly: Rye or rye/pumpernickel swirl bread chopped into cubes Sauerkraut Thousand island dressing Shredded corn-beef Swiss cheese more cubed bread for the crust bake for 30 to 40 minutes until bubbly and bread browns on the top, the original recipe calls for 2 tablespoons of melted butter for the crust, I substituted margarine and it worked fine! |

This may require more time than you prefer but it's one of my favorite Fall comfort food recipes.
Baked Potato Soup 4 baking potatoes 2/3 cup all-purpose flour 6 cups milk 1 cup extra sharp cheddar cheese, shredded and divided 1/2 teaspoon freshly ground black pepper 1 cup reduced-fat sour cream 3/4 cup chopped green onions, divided 6 bacon slices, cooked and crumbled Cracked black pepper Preheat oven to 400°. Pierce potatoes with a fork; bake at 400° for 1 hour or until tender (alternately microwave for 8-10 minutes). Cool and coarsely mash. Add flour to a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, and pepper, stirring until cheese melts. Remove from heat. Stir in sour cream and 1/2 cup onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Ladle 1 1/2 cups soup into each of 8 bowls. Sprinkle each serving with 1 1/2 teaspoons cheese, 1 1/2 teaspoons onions, and about 1 tablespoon bacon. Garnish with cracked pepper. |

Kid Friendly Dinner Pancakes
Serves 4 Total Time: 35m ½ small onion 1 clove garlic 1 cup raw vegetables (any combination of carrots, fresh spinach, zucchini, broccoli, peppers, and corn) 2 tablespoons olive oil, plus more for cooking the pancakes Kosher salt and black pepper Pancake mix (enough for 10 to 12 pancakes), plus whatever additional ingredients are called for in the directions ¼ cup grated parmesan Sour cream, for serving 1. Finely chop the onion, garlic, and vegetables. 2. Heat 2 tablespoons of the olive oil in a large skillet over medium-low heat. Add the onion and garlic and cook, stirring, for 1 minute. Add the other vegetables, ½ teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, until everything is tender, 5 to 8 minutes. 3. While the vegetables are cooking, make the pancake batter according to the package directions. 4. Add the cooked vegetables and the Parmesan to the batter and mix to combine. 5. Cook the pancakes as you normally would (use olive oil instead of butter to help kick it up to dinner status). Top with the sour cream and serve. |

Apple Turkey Fingers
1 lb ground turkey 2 medium carrots 1 large apple 1 garlic clove 1/2 small onion 1/2 egg, beaten 1/4 cup unprocessed natural bran 1/2 teaspoon dried thyme, crushed Preheat broiler. Place ground turkey in a large mixing bowl. In a food processor or by hand, grate the carrot, apple, garlic & onion, or else mince very finely (I grated the carrots using a microplane, but minced the apple, onion and garlic for texture). Add to bowl with turkey. Add the 1/2 beaten egg (or whole egg for older kids), bran, thyme and any seasonings you wish. Mix all ingredients together. Scoop mixture up about 1/4 cup at a time (size of a large meatball) and roll into little sausage shapes, placing on a broiling pan or cookie sheet as you go (you may need to do two pans worth). Wet your hands periodically if it's sticky. Place in broiler and broil for 10-15 minutes on one side, then turn over and broil 5-10 minutes more. Remove and let cool. Store together in a freezer bag or individually wrapped in foil. |
| Place one can of Campbells Golden Musroom soup in a saucepan. Add one canful of your favorite white wine. Place pork chops in the soup/wine mix and suatee until the chops are ready. Serve. |
