Easy Salsa chicken: can be made with any salsa flavor of your choice

Brown butter, cook chicken in browned butter, add chopped or chiffonade sage, squeeze half a lemon on top. Also works with salmon, but you have to be more careful because the salmon may break apart if you let it stick to the skillet. |
This is one of my easy go to meals as well but I use ground turkey. I serve it with rice, shredded cheddar, cut up onions and tomatoes. I never would have thought of adding canned pumpkin. What does it do to the taste and texture and do you still add the tomato sauce a d paste per the recipe on the box? I'm fascinated! |

Mozzarella - marinated, the little balls (I forget what they are called)
Chicken breast cutlets cherry tomatoes fresh basil (Optional) pour the marinate out of the mozz into a baking dish. Place chicken breast cutlets in this, with a bit more olive oil, any dried herbs or Penzey's herb blends, etc. and marinate for a bit. Pan grill chicken in a bit of olive oil if needed. While cooking, cut cherry tomatoes in half, toss in bowl. Toss mozz balls in with tomatoes. Tear up basil leaves, toss in there too. Drizzle with olive oil, salt, pepper, and random herbs. Slice up the chicken into the same size bits as the tomatoes and mozz, and toss into bowl. Mix it up and serve. It's my easiest go-to in a hurry dinner. Also great for leftovers for toddler lunches when cut small enough. |

Teriyaki wings
You can also use Yoshida's from Costco 1 cup kikkoman soy sauce 1/2 cup sugar 1/4 cup cooking wine Garlic powder, sesame oil, white pepper Mix all in container. Add chicken wings. Marinade half day. Lay on cooking sheet and. Bake at 425 for 25 min, turning them half way. |

cook 1 to 2 lbs boneless chicken, cut into squares or strips
cook 1 lb spaghetti/fettucine/linguine noodles sautee 1 sliced pepper, 1 onion & a bag of coleslaw in a little butter or canola oil Combine all of those with a bottle of teriyaki/ginger marinade or sauce, cook on low or about 5-10 minutes for the flavors to mix. Very simple and everyone raves about my 'chinese food' |

Arroz a la cubana--Typical quick spanish dinner
Cook rice (either however you normally do or with a little olive oil onion, garlic, chicken broth or bullion cube) Fry eggs til over easy or medium in olive oil hot enough to get the edges crispy. Put an egg (or two) on a bowl of rice. Top with Goya spanish style tomato sauce. That's it. When the egg yolk breaks and mixes with the tomato sauce it is delicious. You can add cooked greens, mushrooms, or peppers. A lot of people fry a sausage or a hotdog and add that. |

Apple Turkey Burgers:
Mix ground turkey with chopped apple and parmesan cheese and a little bit of bread crumbs and an egg. |

Easy Meatball subs:
Put a bag of frozen (or homemade) meatballs and tomator pasta sauce in a crockpot for 6 - 8 hours on low. For some reason, cooking meatballs all day in tomato sauce makes them wicked good. Serve on Kaiser rolls with cheese. |

Another easy crockpot meal:
Deconstructed cabbage rolls: Put browned hamburger or turkey burger, one jar of spaghetti sauce, 2 cups brown minute rice, some water if needed, and chopped cabbage all in a crockpot. Cook on low for 6 - 8 hours. |
Any particular Thai peanut sauce you recommend? |

I put a glug of olive oil in a baking dish and layer in some halved or quartered chicken breasts (if using frozen defrost or just cook a little longer), big chunks of onion and pepper (any color(s)), eggplant chunks or mushrooms if I have them, and a few sliced garlic cloves.
Then I mix together and dump a can of tomato sauce (or bottled sauce) mixed with s&p, a tbsp of sugar, and basil/oregano/italian seasoning (fresh or dried depending on what I have) and more olive oil on the chicken/veggies. Bake an hour or so. Serve with pasta and some grated parm. And bread/salad if you're motivated. A crockpot works for this also. It's always better the next day. |

I still add the tomato sauce and tomato paste. The pumpkin adds a little extra sweetness but it is pretty subtle. DH noticed and disapproved of the canned sweet potato and canned butternut squash I tried. Only pumpkin will do. |
