Braised beef short ribs. Low oven for 6 hours. So cozy!

I make a big pot of vegetable soup. 2 of whatever bags of frozen vegetables I have in my freezer. Usually I use a broccoli, cauliflower, carrot mix. I cook it in some chicken broth, a 28 oz. can of crushed tomatoes and a 28 oz. can of chopped or stewed tomatoes. Add a can or two of whatever beans I have on hand. Any spices you prefer. We also add either parmesan or feta cheese when serving.

Friday I made roasted red pepper and tomato soup, with grilled cheese sandwiches on sour dough.

Today I made chicken curry over rice.

Both so warm and delicious

It's boiled, what's so repulsive about a little saliva that gets sterilized and washed off?

You think there aren't far worse things than saliva on your veggies? You even eat those raw.

I think I may have gotten the recipe from here but we are trying out caramelized pork and pineapple teriyaki with coconut rice. Chicken pot pie tomorrow and Lasagna soup the next day.

I love cold weather cooking (and eating) !!!!

This is inspired by an episode of Top Chef Masters

Cannellini Bean Bacon and Cabbage Soup


INGREDIENTS

6 slices of cooked bacon fat rendered chopped
1 onion diced
6-7 carrots diced
3 celery stalks diced
1 head of cabbage chopped
1-2 heads of fennel chopped
4 cans chicken stock

1 t thyme
2 cans cannellini beans

Salt and pepper
DIRECTIONS
Render the bacon in a large pot. Add celery, onions and carrots cook for 6 - 7 minutes. Add cabbage and fennel and thyme. Cook for another 6-7 minutes. Pour in stock and bring to a boil. Reduce heat cook for 30 minutes and add beans. Cook for another 10 - 15 minutes.

I made WF short ribs the other day. So little meat and so much fat. It was gross. Worst short ribs I have ever made.


They do tend to be very fatty, I have never found the same quality in my grocery store that I get in any restaurant.

Yum- this is what I was going to say too. Not just any pasta, has to be spaghetti. I like it just with thinly shredded cheddar, but you can also add onions and beans.

So far I've made beef stew, shepherd's pie and banana bread. The kids will certainly ask for Japanese curry at some point. Tonight it's Vietnamese meatballs.

I took one look at them this morning at WF and went "nope". Way too much fat in there.

Oooh, yum! We went apple picking on Saturday, so I will bake this tomorrow.
