I'm so glad fall is finally here and we're getting a quiet rainy weekend![/quote] This is inspired by an episode of Top Chef Masters Cannellini Bean Bacon and Cabbage Soup INGREDIENTS 6 slices of cooked bacon fat rendered chopped 1 onion diced 6-7 carrots diced 3 celery stalks diced 1 head of cabbage chopped 1-2 heads of fennel chopped 4 cans chicken stock 1 t thyme 2 cans cannellini beans Salt and pepper DIRECTIONS Render the bacon in a large pot. Add celery, onions and carrots cook for 6 - 7 minutes. Add cabbage and fennel and thyme. Cook for another 6-7 minutes. Pour in stock and bring to a boil. Reduce heat cook for 30 minutes and add beans. Cook for another 10 - 15 minutes. [/quote]
