You have a lot of meal suggestions, but for teen junk food:
-- King Arthur and Krusteaz brownie mix are very good (we use butter but I'm sure you could sub oil) -- I make banana bread muffins subbing half "one for one" GF flour and half oat flour in a regular recipe. You could add cinnamon and nuts (we have nut allergy too) or skip the cinnamon and add chocolate chips. I also used a good mix once, but it had no fiber, was more like a cupcake.. -- I make cookies from the Quaker oats recipe on the lid but use GF one for one flour and chocolate chips and no cinnamon. You could sub applesauce or oil and some nut butter for the butter. -- Snack Factory GF pretzel chips -- oven baked frozen french fries regular or sweet potato) |

Paneer is a cheese. It's made from milk. It's nothing but dairy.
How did you think paneer was made? I'm at a loss. |
No regular pasta, no lasagna or baked ziti, Alfredo, Mac and cheese, nachos, fried chicken sandwiches or chicken tenders), no chicken Parm, no regular meatballs, no sandwiches or subs, no cheese and crackers, no broccoli cheddar, or potato, or chicken noodle soup. Some of those things, you can make decent (but not great) modifications at home. Some, there's no decent sub. Nothing that has cheese. It is an adjustment. Teens are allowed to have feelings and can't be reasonably expected to express them or suppress them perfectly 100% of the time. Good for OP doing her best at nutrition AND at parenting. |
Sorry, just realizing chic chips have dairy ( we have wheat, soy, nuts, sesame, coconut, and bean allergies, but thankfully not dairy). To the " your kids are brats" PP, add chocolate to the list. |

This salad dressing turned me from a salad hater to a salad LOVER. Not just a salad tolerator. I am eating home made salad right now:

I also really don't like a lot of lettuces, so I went with romaine (skewers? where you buy it in a 'head' but the shape is more like a corn in a husk). I also will buy the butter lettuce head in the plastic container with the roots. And I just discovered this lettuce which I actually LIKE: https://www.iloveorganicgirl.com/products/protein-greens/ In my salad, I vary it as to what is in the house, but below is a perfect day where I have everything: I start with some dry goods: salted macadamia nuts, raw almonds, one Brazil nut for selenium, pepitas, and dried cherries. Then I add cut up a green apple, some carrots and celery (I put the celery in a glass cup with a little water in the bottom in a sunny window and it greens up) Then I add blueberries and raspberries, and this time of year, a peach or an apricot Can add a hard-boiled egg for protein if you want Then I put in the greens after chopping them up (so I don't have to slog through 1000 chews of greens) Then the dressing (I do this in this order so the dressing gets mostly on the greens). Don't skimp. I've decided to buy multiple bottles of dressing as overall I will eat this salad more, than if I only have one bottle and am worried that I'm running low. Toss...then Sliced/cubed avocado on the top and then toss again. (Hint with avocados: buy green and hard and the shiniest you find. Then put in a dark drawer to ripen. This is because it's impossible to buy a ripe avocado that someone hasn't squeezed and bruised. They are so good when ripened this way, you can actually cut them in quarters and peel off the rind.) Gluten free bakeries often have some GF & DF items. It's a big change to go gluten free and dairy free at once, so mistakes will happen, be kind to yourself as you figure it all out. Your son won't like everything but eventually will find what he likes. You can find vegan chocolate chips at Whole Foods. I recommend Seoul Spice, Chipotle and Cava for GF/DF teens. Rice bowls with meat, vegetables and dressing are filling and easy to pick up. |

Curries made with coconut milk! Biryani or aloo gobi Burgers w/ GF buns (or lettuce wraps) Hot dogs w/ GF buns Wegmans's lentil pasta is good, with a meat sauce or marinara Fried rice Sushi Pho (gf hoisin sauce) Chicken or shrimp and broccoli in white sauce (from a Chinese restaurant) Spring rolls Chicken/shrimp/tuna salad Steak frites BBQ pork/chicken/beef/ribs Chili Tacos w/no cheese Falafel and hummus Schwarma (chicken, etc) |

I've done this for over 3 years and then started eating wheat again, as it is only a sensitivity, according to my gastro.
Potatoes, use can't believe it is not butter and stock for flavor, such as chicken stock. Rice noodles, are tasty and have good calories. Potatoes and rice to become staples. I never really got into gluten-free breads, they do not taste great to me at all. Some of my recipes: Sliced potatoes with bacon, put in the oven, and simple and filling. Moussaka is the same, just with ground meat. Cabbage rolls with meat and rice. Beans, so many beans, thick, soupy, stews, goulash, all with potatoes. Thai food became my favorite kind of Asian food. Panang chicken and pad Thai. Use coconut milk instead of dairy and voila. Sorry your kids have celiac, must be hellish! |
Not all of Wegmans sushi options are gluten-free bcs of cross contamination due to the inclusion of the rice crispies that they add to rolls and sprinkle on top of rolls. Also the mock-crab that they use is not gluten-free. Wegmans labels will say 'no gluten-containing ingredients' this does not mean the item is gluten-free. |
Additionally, soy sauce contains wheat. Any dish made with soy sauce is not gluten-free. |
In addition to the soy sauce(there are gluten free ones but most places do not use it)sushi rice uses non-distilled white vinegar, which is made from either corn or wheat. Most do the time it is wheat so no sushi unless you ask first. |
