Pls help. Gluten-dairy free dishes ideas

Other than fruit salad, roasted vegetables, chicken, salmon filets, thin beef, what other nutritious and flavorful dishes can I make for teens who must eat GF and DF? I also made biscuits and a loaf of bread, but teens don’t like “this GF sh*t”.
I’m running out of ideas and don’t have much support from other family members. It takes a village to feed kids.

Look up nutritionist RD Amanda Nighbert. She has great recipes she shares regularly. For example, egg roll in a bowl is one of our favorites.

Risotto (skip the cheese), all kinds of Thai/Vietnamese foods with GF soy sauce and rice noodles or rice, all kinds of Mexican foods (again skip the cheese)…

Look for recipes with bean thread and rice noodles - stuff like pad Thai, pho, bun, ants in trees (google it), sushi or sushi “bowls” (seasoned rice, shrimp or crab, avocado, cucumber
soy & seaweed). Asians are often lactose intolerant so any non-gluten Asian dish is likely to be a fit.

My GF/DF friend does a lot of cooking with coconut milk. You often don’t taste the coconut, just the richness dairy usually provides.

Agreed. A lot of Asian food can easily be made gluten free and dairy free just check the soy sauce to make sure it’s a gluten free version. Rice noodles are also a great carb as are quinoa, polenta, and corn tortillas. Look up rice bowl recipes. Soups are also easy to make gluten free and dairy free, but it’s getting a little hot for soups. Or get into potatoes. Find other things than bread, because gluten free bread just really isn’t the same—so best to just avoid.

I’ve learned good dairy substitutes exist for everything but cheese really. I’m only lactose intolerant so I can just take a pill for the cheese, but otherwise have no complaints about choosing dairy free.

Research the GAPS diet or paleo diet recipes and you’ll find many things. Some still use eggs but you can get egg replacement at grocery store so it should be ok.

Can’t ever go wrong with GF spaghetti and meatballs or any kind of gf pasta with marinara or pesto sauce. Add a little extra salt to the water and increase cooking time a few minutes for gf pasta.

Chicken Picatta with GF pasta, lemon/wine/capers, can use oil instead of butter - GF pasta is good
Things with rice - stir fry, etc. with GF soy sauce
Grilled pork with Vietnamese/Korean lettuce wraps
Sushi
Bacon and egg sandwiches on toasted GF bread

I recommend the tortilla and potato chips. The chipotle bbq tortillas taste like Spicy Doritos but I’ve liked all of them. Cashew queso is good, would make great nachos.

Pork enchiladas(just skip the cheese) add avocado, shredded cabbage with a vinaigrette.
Hamburgers with glutton free rolls(whole food glutton free Hamburg rolls frozen)
spaghetti with meatballs(glutton free pasta is easy)
Wraps(glutton free) with slow cooked meat(beef, lamb, chicken, pork- cook slow and low 300) plus rice, bean and mix vegetables) this is an easy lunch and takes like 5 minutes to make in the morning.
BBQ pulled pork with corn bread(dairy free), beans, red peppers and corn plus coleslaw(mustard vinaigrette)

Their soy sauce is gluten-free. They have gluten-free eel sauce. And they even have some kind of crispy thing in place of the Panko

Sorry I don’t mean to hijack because I know this is supposed to be about recipes. They even have Inari that’s gluten-free! As much as folks look down on grocery store sushi it is really nice to have something fresh reliable and safe.
