The dry brine is the key and so much easier than the wet brine!

Honestly, the one year I bought a heritage turkey, I was underwhelmed for the price. Last year, I just used Giant's Nature's Promise organic and it turned out great.

No, this was early on, when things were still good. He'd occasionally grab a quick breakfast after a run, with a quesadilla wrapped around a piece of sharp cheddar. Added peanut butter for more protein. I thought it sounded DISGUSTING. (I KNOW. I really do.)

But it was oddly not peanut-buttery? Just, maybe, richer? more depth of flavor? Anyway, my work used to do themed potlucks before COVID. I was going to wait until we started back up and it was my turn, and I'd propose a theme of "unexpected combinations" and try it out on people. I'm kind of giddy that I might be able to do it anonymously instead.

I'm so glad you corrected that! I was so tired last night and definitely misspoke.

He used a plain dry tortilla wrapped around a thick slice of sharp cheddar, with added fresh-ground peanut butter. I liked it, unexpectedly, and over the years started using it in cheese quesadillas.

PP, you’re not alone. My grandmother introduced the cheddar and peanut butter combination to my mother and then it skipped a generation (I don’t like it!) but now my daughter is obsessed with it and she has also introduced it to some of her friends.

This definitely helps!. If you brine and flavor the quality well raised turkey even the Thanksgiving haters can manage to choke down a piece or two once a year.

Yes thank you. I get so sick of the people who constantly claim if you don't like Thanksgiving food its only because it wasn't cooked correctly. Sorry but I have had it made by incredible chefs and its still not a great meal. Trust me no one is drooling over your dry brine or wet brine or whichever other method you are convinced makes it yummy. Its blah. Edible but not worth the effort and made because you are supposed to have on Thanksgiving. This is why no one ever wants it any other day than Thanksgiving.

Whenever someone is going on and on about delicious and super yummy their version of a dish is, I brace myself for it tasting like crap. In my experience, the people who make a big deal about their food are mediocre at best cooks.

Improved with hot sauce. Not great but not s bad as expected. I have a new "weird food combo" icebreaker
