[/quote] +1 The dry brine is the key and so much easier than the wet brine! Honestly, the one year I bought a heritage turkey, I was underwhelmed for the price. Last year, I just used Giant's Nature's Promise organic and it turned out great. [/quote] This definitely helps!. If you brine and flavor the quality well raised turkey even the Thanksgiving haters can manage to choke down a piece or two once a year. [/quote]
