I don't have any good suggestions for you, but I feel for you, OP. I also have reactive hypoglycemia when pregnant. I actually fainted from low blood sugar after the GD test.
Part of your issue with your current breakfast may be the lack of protein. You might be able to better tolerate the bread and almond butter if you also had something with protein, like a protein shake or yogurt. I like greek yogurt with chia and a little bit of honey for breakfast. You could swap the honey for almond butter. It won't be warm like toast, but you'll get the almond butter flavor. The "recipe" I use: 3T whole eggs (https://vitalfarms.com/pasture-raised-liquid-whole-eggs/) 2T almond flour (amazon.com/dp/B07L9Q45HG) 1/4 cup shredded mozzarella That's it. Baking powder might make them fluffier, but if you're going for toast texture, probably not necessary. Just do it in two batches, or you'll have a mess. If you only want one, you can fridge the other and toast it for tomorrow's toast. Hope that helps! |
