NP. These recipes, including the hash brown and shredded brussel sprouts, sounds delicious. Cauliflower fried rice-- why didn't I tihnk of that? Do you use a recipe for the sprouts? If so, would you mind sharing. Thanks.

So, the hash greens, as we call them, I make by frying some bacon, pouring off most, but not all the grease, and the frying the shredded sprouts in that. Not sure I'd want to do processed meat if I was pregnant. I usually serve them with the bacon, French Toast and fruit, because I'm not low carb, I just want my kids to eat something green, and I actually think they taste great.

We usually do a variety of latkes, but if I was just doing zucchini, I'd probably do them something like this:

and for the fried rice, I usually do 1/2 cauliflower, 1/2 brown rice, but all cauliflower tastes fine.

I’d make almond flour pancakes on the weekend and freeze, microwave one each morning (or toast it if you want a little crisp to mimic toast) and spread some almond butter on it.

What about a rice cake? It's fewer grams of carbs (even though rice isn't low carb).

You can make almond butter cookies - almond butter, egg, and some sweetener (like Splenda). Roll it into balls, press down with a fork, and bake it. I used to do this with peanut butter.

I like carbs and bread. An alternative like an English crumpet has less cals. Trader Joe's crumpets only have 100 cals each.

OP. I like carbs and bread too! I started crying at lunchtime because I just want to eat a sandwich. Low blood sugar does strange things to a woman.

The keto breads are actually a decent sub! The tortillas are good as well, mainly the mission ones.

OP what does your OB say? Have they sent you to an endocrinologist?

Could you cut the toast into quarters and eat one every 15 minutes? I don’t know how you manage this problem, I’m not a doctor obviously. But most of the posters here are talking about low carb diets for weight control. You’re controlling your blood sugar during pregnancy which is a very different matter and you need to work with your doctor(s) to get it under control. You can’t just cut out all carbs.

When I had GD, sweet potatoes were good/safe for me. But I know you have a different problem so that might not help.

OP, Schmidt Old Tyme 647 Italian bread is a widely available low carb bread, at 6 grams of carbs per slice. Costco and Sam’s Club carries it. Carbonaut seeded bread is 2 grams per slice if you don’t mind seeded bread. It is available in some Targets. Sola is available at some Walmarts and is 1 or 2 grams of carbs per slice.

DH has Type 2 diabetes and these are some of the ones he has liked.

I used to have toast and cheese and fruit for breakfast every morning forever. Then I started getting pre-diabetic markers, and my doctor said I should not be having fruit and bread as my first meal and recommended that I think of breakfast as lunch instead. I was SO opposed to that, fought it for so long. Then I started intermittent fasting, and my breakfast shifted to 12pm, and kind of accidentally I started skipping the toast meal and instead just had lunch -- eg salad at the office, or leftovers or omelet at home. And it's been SO great. It's an easy way to cut calories, I have far fewer sugar cravings through the day, and my pre-diabetes has receded. Highly recommend that you just rethink breakfast altogether.
