Now I'm pregnant and tolerating carbs extremely poorly, to the point that I have had to cut all sugars and starches out of my diet. I tried switching the WW toast for Ezekiel bread but it's still too much for me, and I'm finding swapping to eggs for breakfast really depressing -- my toast and tea has been a warm cozy hug to myself every morning for a long long time. Any suggestions for what I can spread my almond butter on that will feel at least a little bit similar? |
| Is this a GD thing? If you can’t have a slice of Ezekiel bread without blowing your number, you need to check in with your doctor. A slice of Ezekiel bread is 15g with a lot of fiber. |
| No, it's not GD -- when I'm pregnant I get reactive hypoglycemia, where my body overproduces insulin and tanks my blood sugar. If I'm careful about my glycemic index, my one hour postprandial blood sugar is about the same as it is fasting. If I eat stuff that's too starchy, it's actually lower (and also obviously I feel terrible -- hypoglycemia is very unpleasant). Luckily it vanishes after the baby is born, but it's worse with each kid. Ezekiel bread was enough for me in the past. |

Apples with almond butter? They're decently low carb, and they will give you the crunch at least. You can have that with something warm with them. How are you eating your eggs? You could try a frittata or some of those egg bites (like the ones starbucks sells) to give you some warmth.

Completely not the same thing, and not a vehicle for almond butter, but I make hash browns with shredded brussel sprouts, and they have a crispy crunchiness that is warm and satisfying. |

Brussel sprout poster, I wonder if you could use them to make latkes with eggs, and then spread almond butter on those, or thin out the almond butter and dip.
If you don't like the taste of sprouts, zucchini also makes good latkes. I also like fried cauliflower rice with a lot of eggs in it. You could also add almonds. |

| I like the wasa crisp bread, light rye. It has a neutral flavor and not too hard. 5 1/2 grams of carbs per slice. I like it with cream cheese and everything bagel seasoning. I bet it would be great with almond butter. |
