What makes a good potato salad?

Absolutely this! My preference is for red potatoes, onion, eggs, mayo and sour cream, and possibly something crunchy like chopped peppers. No pickles, no vinegar, nothing sweet, maybe a little bit of mustard.

Red Hot and Blue potato salad is closest to how I make my own although their potato chunks are a bit too large for my taste.

I acknowledge that many other people like vastly different versions of potato salad. I grew up thinking I couldn't stand potato salad until I finally tasted some that was made the way I like it.

I get lots of compliments on mine. It’s not a recipe but here’s what l do.

Small potatoes (new potatoes if possible), skin on. I use a lot of egg. Ratio is about 3 lbs potatoes to 10 hard boiled eggs. Small diced celery, maybe 3 stalks.

Dressing is light sour cream, mayo, Dijon mustard, salt and pepper, chopped parsley and lots of diced dill pickle.

You can also make it without bacon, just marinate onions in the vinegar, then drain, and mix with the potatoes, add olive oil.

Red new potatoes with skin on, Mayo, mustard and fresh dill.

Red and Yukon gold potatoes, boiled and cut in small halved wedges.

Soak sweet onion in red wine vinegar.
Mix a little mayo, sour cream, whole grain mustard, salt, pepper, lots of fresh dill, diced celery, and the diced soaked sweet onions with some of the vinegar.

Sometimes I'll add an extra green like arugula or diced snap peas or julienned pepper or something.

So good.

No mayo or eggs. Whole grain mustard + dill + red potatoes. Smitten Kitchen’s recipe is awesome. NYT Cooking also has a recipe. I’ve always heard this preparation called “German potato salad.”

I don't have a recipe with measurements, but use mayo, a little sour cream, dill relish, mustard, celery seed or celery, and sometimes eggs. I don't like too much mayo. And salt and pepper, of course.
