What makes a good potato salad?

must have eggs, mayo, mustard, celery, and celery seed. Bacon is a good addition too! potatoes must be just on the firm side of soft- not too mushy

For potato salad, as long as you don't use Duke's or Miracle Whip, you're good. Both of those are super sweet and really throw off the flavor of the potato salad.

I always get rave reviews when I make this one. It is well seasoned, just enough mayo, and a lot of other ingredients that make it very complex in flavor (I know, I said that for a potato salad.)

Technique! Mix the potatoes into the sauce/wet ingredients when they are warm. Second acid is your friend. Potatoes are starchy and mayo is fatty. You need vinegar to balance it. Chopped red onions can give it another flavor. A few teaspoons of Dijon mustard also give good flavor. Bacon and or chopped celery can add crunch. Salt is important.
