| must have eggs, mayo, mustard, celery, and celery seed. Bacon is a good addition too! potatoes must be just on the firm side of soft- not too mushy |
| No mayo |
PP. I agree totally! |
+1,000. I don’t hate mayo, but lots of people do, and German potato salad is so much better. Potatoes, green onions, bacon, apple cider vinegar mixed with stoneground mustard, salt, pepper, done. |
Oops. Forgot dill. |
| It's like brocoli casseroles. They are made in different ways. |

I always get rave reviews when I make this one. It is well seasoned, just enough mayo, and a lot of other ingredients that make it very complex in flavor (I know, I said that for a potato salad.)

| I also like Japanese potato salad, which uses kewpie mayo. |

This, but doesn't need to be hot and can skip the bacon. We also add a ton of smoked paprika:

| Real mayo, not miracle whip. |
| Technique! Mix the potatoes into the sauce/wet ingredients when they are warm. Second acid is your friend. Potatoes are starchy and mayo is fatty. You need vinegar to balance it. Chopped red onions can give it another flavor. A few teaspoons of Dijon mustard also give good flavor. Bacon and or chopped celery can add crunch. Salt is important. |
X100 miracle whip is too sweet. |
