Ugh, potato salad is very subjective and polarizing. The above recipes with bread and butter pickles, sugar, Miracle Whip are only good if you like a sweet potato salad. The horseradish recipes are only good if you like horseradish. What do you like, OP?
Definitely needed: potatoes (Yukon gold are my favorite, make sure to adequately salt the cooking water), tons of celery and mayonnaise. If you like red or green pepper, go for it. This is personal preference, but to me it is about herbs and tanginess.
YES: dill, chives, parsley, onion, celery (very small dice), mayo, white vinegar, mustard (bacon if you're feeling it) NO: sugar, peppers, eggs, Miracle Whip, relish For the potatoes, skin-on to maintain some texture and size matters. The chunks need to be substantial, not little tiny cubes. |

I like a potato salad with a vinegar/lemon/oil dressing, green onions, mixed fresh chopped herbs, salad and pepper. Perhaps some cumin. Oh, and skins on. Keep it simple. |

| I really like the potato salad at Red Hot and Blue. I agree with other the key is to make sure the potatoes aren’t mushy. I like to add sour cream to the mayo but I think that’s a personal thing. I add celery and onion too. |

I really only like the potato salad at Carolina Brothers. The egg in question is hardboiled and chopped. I am aiming to make the cold, mayonnaise dressed version, not the warm bacon German potato salad and while I love horseradish, my mother despises it, so regretfully I won’t be making the Smitten Kitchen one. Definitely not the miracle whip kind. It wasn’t till adulthood that I realized how much I disliked miracle whip (and I like a sweet taste generally). |
| When the potatoes are still warm, add dressing so it soaks in wll. We like red wine vinegar, lemon, mayo, mustard, and lots of green onion and herbs |
You don't like that mush of over soft potatoes grinding into your teeth or that slick of oily mayonnaise on your tongue or that sharp bite of green onions |
Add mustard til the sauce is yellow, for the best potato salad. |
