What makes a good potato salad?

When carrots are added, it is no longer potato salad- it is a salad with potatoes, celery and carrots dressed with vinaigrette.

The right mayo is key. You need to use Hellmann's Mayonnaise.

Here is their potato salad recipe:

2 pounds Potatoes (5 to 6 medium, peeled and cut into 3/4-inch chunks)
1 cup Hellmann's Mayonnaise
2 tablespoons Vinegar
1 ½ teaspoons Salt
1 teaspoon Sugar
¼ teaspoon Black Pepper (ground)
1 cup Celery (thinly sliced)
½ cup Onion (chopped)
2 Hard-Cooked Eggs (chopped, optional)

You know that Hellmann's isn't sold west of the Rocky Mountains, right? I mean, if you are Air B&B'ing in California and offer to make the potato salad, either bring Hellmann's with you or know it will not be found there under that name.

I think the equivalent is Best Foods.

My family definitely wants the mayo-based version and as we’re in the Midwest and not Washington state, I’ll use Hellmans. Thanks, PP. I will have to make it once myself, then travel to Carolina Brothers to compare.

Yes I know that; however it doesn't matter. We're here in DC (the site is DCUM) so we have Hellmann's here.

While I take your point, if I'm at an Airbnb in California, and for some insane reason I have to make potato salad, then I'm buying the potato salad.

No worries. I assumed that everyone knows Hellmanns is from Best.

For potato salad, as long as you don't use Duke's or Miracle Whip, you're good. Both of those are super sweet and really throw off the flavor of the potato salad.
