I used to shop Walmart, but now the prices are crazy high. Maybe in your area it hasn’t increased as much, but in California is actually not a great deal anymore. I’ve been going to Asian and Armenian markets for produce and that is still reasonable. |
It’s only organic milk. I don’t pay organic for anything else. |

Meal planning is your friend. Not chickpeas, but we have dried beans at least once a week. I make a huge pot of pintos & freeze portions for tacos, burritos, etc. So I know every Tuesday I’m having some sort of pinto beans for “Taco Tuesday.” It’s routine, but we have variety by switching up toppings or the kind of tortilla or whatever. Tonight was nachos... super simple. Then I usually have leftovers for lunch then next day.
We do a meatless Monday... This week, I made: sautéed onions, mushrooms, garlic, white beans, & spinach with Parmesan and served with baguette. I added poached eggs on top but you could skip that. Cooked some pasta at the same time and mixed the leftovers with pasta for a cold salad the next day at work. |
There are like a billion chickpea recipes out there. I just made sweet potato, chickpea, and spinach curry tonight for dinner. Think about what type of food you like eating, and there's probably a way to shoehorn chickpeas into it. |

Adults don't need cow milk. Try a plant milk like soy or almond. If you drink milk because you like it over cereal, vanilla sweetened plant milk tastes even better than milk over cereal.
I had a vegan Moroccan stew for dinner consisting of: onions, garlic, butternut squash, zucchini, chickpeas, canned chopped tomatoes, and carrots, and a few shakes of a Moroccan spice blend. I served it over quinoa with store-bought harissa (Moroccan red pepper sauce) which makes it taste even better. Just search for "vegan Moroccan stew" and you will find tons of recipes online. Also search online for the classic Indian chickpea dish "chana masala" and you will also find online recipes. Eating vegan/vegetarian is a lot easier if you organize the spices in advance, particularly spice blends. Once you identify and assemble the key spices for each type of ethnic cuisine you like to eat, it is quite easy to make tasty meals. |
