Can afford to buy meat, dairy, or eggs so I guess I’m going vegan! (Chickpea recipes)

What are your favourite chickpea recipes? I’m not really going vegan but need to seriously cut back. Organic milk in LA is almost $6!! Would love some new chickpea Indian recipes or even cold salads? Right now I make a Greek salad with chickpeas or else with feta, parsley, lemon, and garlic. What are you making?

I like adding chickpeas to tabbouli. Serve with a side of hummus. Roasted chickpeas are great, too.

I don’t get why you can’t afford to buy eggs. Are they expensive in LA? Where I shop, a dozen eggs is cheaper than even a small chunk of feta.
I often do a pot of lentils with onions and spinach, then every day I add something or change the spices and toppings. Sorry, though. Many of my budget recipes are egg-centric, like cabbage pancakes and omelettes.

Unfortunately I do, I grew up in Europe and the milk here tastes different for me and I can’t drink it. Trust me, I don’t want to buy organic kill!

I'm allergic to eggs and dairy, so we don't eat that by default. What we've found is to get fresh produce that is in season. That's a big money saver as it tends to be the cheapest.

I sub chickpeas for chicken often as well, mostly because I've forgotten to buy it lol. Chick pea pot pie is wonderful with cashew milk. I'll also roast some little potatoes, then make a chick peas in a smoked paprika sauce with a garlic aioli. It's DH's favorite dish. We also love rice noodles with carrots, peppers, onions and garlic in a sweet asian sauce.

FWIW, DH also grew up in Europe and dislikes American milk but of all things Trader Joe's milk (the regular, not organic) works for him. He actually loves it. So you might try that?

When you're broke, you can't afford to be fussy. You will get used to the taste after a week.

Eggs should be affordable.

I love chickpea cous cous salad. Prepare whole wheat cous cous, then I add chickpeas, sliced grape tomatoes, sliced green onions, tossed in olive oil and vinegar, served cold, so so good.
