Meal Plan Monday

Anyone have good quinoa recipe suggestions? Just read that soaking first can take off some of the bitterness. (But I don't know if that also reduces the nutritional value...but I don't much like the quinoa bitter.) Thanks!

Mon: Beef and broccoli stir fry, brown rice
Tues: Pan seared pork chops w/ shallots, ratatouille
Wed: Crab cakes, salad
Thurs: Pizza, pre-made from Whole Foods
Fri: Don't know again - likely something vegetarian, like quinoa, spinach and avocado salad

Monday: leftover veggie and white bean salad
Tuesday: chicken salad
Wednesday: eggplant Parmesan
Thursday: black bean burritos w/ side salad
Friday: leftovers
Saturday: chickpea, spinach, zucchini quinoa with tomato sauce
Sunday: roasted fish and veggies

I didn't plan very well this week:

Sunday: that gnocchi/white bean with spinach and tomato recipe the PP posted that has been talked about a bunch on this forum.

Monday: leftovers, with salad (spinach greens, homemade dressing, toasted pecans, apple)

Tuesday: Carrot and ginger soup (easy to make though it takes a long time with having everything cool before blending, etc., preschooler will eat a sandwich/fruit/veggie and have soup tomorrow night); same salad as above

Wednesday: leftover soup and side of frozen veggies

Thursday: Uh oh. Probably frozen veggies and scrambled eggs/toast

Friday: order pizza or make Amy's frozen pizza

Saturday: will shop that morning, probably do crock pot chicken tacos

Zucchini casserole and garlic tilapia
Chili shrimp and asparagus stir fry
Crockpot chicken taco chili

Not sure what order I will make everything, but I have all the ingredients. Santa fe turkey is tonight.

PP, I like quinoa with black beans, diced tomato, corn, cilantro, cumin, scallions, and lime juice. I'll serve that with salad and vegetables as a main course (we're vegetarian). As a side I like to cook quinoa in veg broth and then fluff it with cilantro and tomatillo salsa.

PP - what great ideas for quinoa. I'll definitely try them!

Sun - chicken and cherry salad (with honey mustard dressing)
Mon - Grilled chicken with texmex green salad (butter lettuce, cucumber, green pepper, avocado, pepitas - lime and garlic dressing)
Tues - Leftover spaghetti
Weds - jerk chicken with stone fruit slaw (from epicurious)
Thurs - Korean beef, asparagus, egg, rice bowl (from epicurious)
Fri - take away pizza
Sat - bratwurst, corn on the cob

heh, I was the OP of the gnocchi recipe. Glad to still see it making rounds.

This week (all vegetarian)

Sunday night: Gnocchi with chard and tomatoes
Monday: Creamy chikn enchiladas
Tuesday: Veg chikn parmesan over spaghetti with a side salad and garlic bread
Wednesday: Veg chikn with rice
Tonight: Probably veg beef tips in little tacos. Or veggie chili dogs

this is what we did/are doing

sunday: turkey burgers with avocado; salad
monday: pasta with chard, chick pea, garlic and red pepper, leftovers for lunch at work
tuesday: grilled salmon with tomato basil salsa from garden, steamed potatoes,steamed garlic, white wine
wed: thai curry with chicken, eggplant, green beans and brown rice: plus beer
thursday: chili rubbed flank steak, corn, salad lots of red wine (family in town)
friday curry leftovers from Wed.
Saturday: farmer market inspiration or take out.

I make huge bowls of cold bean type salads on the weekends and eat off that with a little extra here and there, like some sort of grilled fish or chicken or lettuce greens.

Don't see how you all have the time or inclination to do much cooking during the week!!

Oh yea, and in the winter, replace bean salads with soups.

I'm also a big fan of big batches of stuff too, soup all year round and pasta/bean salads. Quinoa salads too are pretty easy - throw in crock pot and whip up a quick dressing and pair with spinach and other toppings. I also like big batches of a lighter turkey chili and crock pot dishes. Shredded BBQ chicken and chicken tacos are two faves that can stretch over a few days.

Otherwise we do lots of quick stir frys, quesadillas and guac, and a couple of casseroles.

We're vegetarian /pescatarian. This week:

Sunday: mushroom quiche
Monday: Quinoa salad

Monday: DH has a boys night planned, so I'll have leftovers or something else quick

Rest of the week (order tbd):
- tacos with homemade salsa and a corn and tomatillo soup
- cold sesame noodles
- pasta with roasted eggplant, squash, tomato, and mozzarella
- hummus with meat, served with pita and veggies
