In an effort to facilitate weekly menu planning (and encourage more home-cooked, healthy meals), I thought it would be a good idea to share our weekly meal plans. Please provide links to any recipes if you have any. I hope we can update this thread every week. Thanks in advance.
Monday: Pan-seared snapped with glazed turnips and sauteed spinach (trying to use my CSA veggies) Tuesday: Leftovers from Sunday (pesto pasta with white beans, sauteed zuchinni, peas, and red onions) Wednesday: Chicken fajitas Thursday: Leftovers from Wed Friday: frozen pizza and salad or frozen veggies Saturday: black bean and brown rice burritos Sunday: Veggie Lasagna |

Sunday: Homemade pie with pesto, white beans, tomatoes & manchego
Monday: tacos with chicken & fresh corn Tuesday: pasta with sardines (http://www.nytimes.com/2010/03/31/dining/31mini.html) Wednesday: panzanella Thursday: leftover surprise! Friday--it's the 4th and we are driving to grandma's. Road food! |
| Sadly I am not in a good planning groove, but wanted to mention that the Six O Clock Scramble service (or even just the cookbook) is great for weekly seasonal menu planning. |

Tues: teriaki salmon w/ rice and spinach Wed: tacos Thurs: polenta "lasagna" with mushrooms and zucchini Fri: roast, potatoes, broccoli |

Monday: Turkey Burgers, fresh green beans Tuesday: pizza Wednesday: BBQ chicken, corn, salad Thursday: leftovers Friday: ?? |

Monday: Pulled pork BBQ leftovers that were frozen, rice, and steamed carrots
Tuesday: Up-the-butt chicken on the grill (stick a can of Coke into the rear of a chicken and grill over indirect heat) w/ grilled potatoes and corn on the cob. Wednesday: Black bean, corn, quinoa salad w/ chopped tomatoes. Side of spinach salad. Thursday: Frozen pizza w/ leftover chicken, salads, and frozen broccolli. Friday: Dinner at my parents' house Saturday: Same as above Sunday: Homemade personal pizzas on the grill and roasted brussel sprouts. |

Another week! Here is our menu this week:
Monday: we didn't get to the grocery yesterday as we usually do. So tonight will either be Chipotle or homemade black bean burritos (brown rice, seasoned black beans, salsa, cheese) with frozen vegetables on the side. Tuesday: Dinner out (date night) for the adults. Pasta and veggies for the kid. Wednesday: 4th of July BBQ. I'm making corn salsa, guacamole, brownies. Thursday: Pasta w/ spinach and white beans (adapting this recipe-using whole wheat pasta instead of gnocchi due to dietary restrictions - http://www.eatingwell.com/recipes/skillet_gnocchi_with_chard_white_beans.html Friday - grilled chicken and vegetables Saturday - grilled chicken salad or grilled veggie pizza (might try this dough recipe: http://taste-for-adventure.tablespoon.com/2011/05/09/whole-wheat-pizza-crust/) using leftovers from Friday Sunday: grilled fish and veggies |

Monday - Zucchini & asparagus barely risotto, grilled chicken, salad
Tues - Quesadillas with leftover chicken, black beans, goat cheese, frozen edamame on the side Wed - BBQ Thurs - Panini's (Zuch, Tom, olives, goat cheese, basil), and roasted green beans on the side Fri - Quiche with any leftover fridge produce, salad Saturday -pizza with garden produce (I'm guessing more zuch, tomatoes, peppers, basil) and goat cheese I planted too many tomato and zucchini plants this year and they are already coming out of our ears - is it obvious?
