Meal Plan Monday

Sun: chicken, eggplant and ginger stir fry, w/ tofu, over brown rice
Mon: Beef kabobs w/ green peppers and onions
Tues: Lentil salad w/ beets and goat cheese
Wed: Kale and other greens, either w/ pasta or in a frittata
Thurs: Leftovers
Fri: Humus and cucumber sauce w/ lettuce and roasted peppers sandwiches

- tacos with homemade salsa and a corn and tomatillo soup

- hummus with meat, served with pita and veggies


Recipe please for cold sesame noodles.

Monday: takeout (hadn't made it to the grocery store yet)
Tuesday:
Wednesday: Broild Maple Salmon, Sauteed Squash, Zucchini and Onions, Whole Wheat Couscous with cranberries
Thursday: Quinoa with spinach, zuchinni (our CSA gave us a bunch this week can you tell?), chickpeas and tomatoe sauce
Friday: Date night!
Saturday: Grilled chicken salad
Sunday: Black Bean Burgers with Baked Sweet Potatoe Fries

Love these meal plans although I am sad that our preschool girls wouldn't eat most of the yummy veggie recipes I see here.
Sunday - bbq steak, red potatoes, brocoli and sauted spinach.
Monday - teriyaki baked chicken, rice, asparagus, peas and green beans
Tuesday - Italian sausage spaghetti
Wednesday - leftover spaghetti
Thursday - Mexican night, chicken quesadillas, rice, beans and salad
Friday - Takeout Vietnamese.

I love this thread. To the OP who purchased snapper, where did you find it? I have not had good luck the last few times I have purchased it.

A little late this week - oops!

Monday - Indian takeout. I was too tired and no leftovers to just heat up.
Tuesday - spinach salad with Amy's Goddess dressing (OMG - have you tried this??? It makes me crave salad) and chana masala leftovers
Wednesday - Quinoa with spinach, chickpeas, onion, zuchinni, marinara sauce (I planned to make it last week but failed to do so)
Thursday - Sauteed chicken and veggie and couscous
Friday - out of town through the weekend

Sunday: roast chicken with swiss chard, corn on the co, and potato salad (in a mustard viniagrette, not mayo)
Monday: I had a dinner meeting, so DH had 5 Guys.
Tuesday: Baba Ghanoush w/french bread followed by corn soup
Wednesday: Chicken enchiladas in salsa verde (with the leftover roast chicken)
Thursday: Pulled pork sandwiches with cucumber salad and leftover potato salad
Friday: Stuffed cabbage (courtesy of DH's grandmother, been in the freezer)

Thursday: maybe leftovers; maybe pull out some frozen chicken and do a stir fry with frozen veggies
Friday: Amy's frozen pizza
Saturday: replenish groceries, so wide open. Possibly spinach quiche.

Not the PP, but I have had okay luck buying snapper from Whole Foods. Where have you been buying it? Don't know if I've even seen it anywhere else.

Wow pps, I'm impressed-I have to get out of our meat rut, I think we had heavy meat at least 3 nights this past week

Ok pp here, our meals were good but too much in one week
Mon: easy chicken tacos (place breasts in baking dish, cover with a jar of salsa and seem taco seasoning, bake uncovered at 350 for 30 min-so simple!
Tues: balsamic beef with onions, another easy one
Wed: Caesar salad with tuna and crusty French baguette
Thurs: crock pot carnitas with black beans and rice, gave chipotle a run for their money!
Fri: I think we will do pizza at the pool tonight

Monday: baked eggplant (halve the eggplants, bake cut side up for 35 min at 350) and top with curried greek yogurt sauce (turmeric, red pepper, cumin, cilantro, salt, pepper, chili powder, crushed garlic), serve with paratha
Tuesday: Stirfry beef with broccoli, edemame (thawed from TJ's), rice
Wednesday: watermelon-tomato salad, and pesto gnocci
Thursday: eating out
Friday: fruit salad and pressed paninis - mozzarella, roasted red peppers, pesto, balsamic vinegar; prep overnight french toast for weekend
Saturday: grilled corn and pork chops
Sunday: TBD; maybe roast a chicken and do quinoa-artichoke-red pepper-chickpea salad

Wed: Homemade beef and veggie curry over brown rice

Fri: Roasted lamb shoulder with eggplant, zucchini and tomatoes (Marcella Hazan recipe to use up these veggies from our garden)
