When I was in college, I worked at a cafe where the chicken salad was by far the most popular thing on the menu, and lots of men ordered it.

That's a tablespoon per person. Many people will put a tablespoon of mayo on a sandwich.

I think chicken salad is fine and I also think most people are fairly flexible about what they eat even if the exact amount of mayo is not what they would prepare for themselves. That said I would likely have an alternative sandwich option like turkey out on the table as well.

I like homemade chicken salad with minimal amount of mayonnaise. I also like it with celery. I have had it with grapes and dried cranberries and pecans but it has to be cold.

I eat pretty much everything, but I dislike mayo based foods. I would grit my teeth and politely eat the chicken salad. It’s a somewhat old fashioned dish that I’m sure your in-laws love, but it’s not as universally loved these days. Did your husband request a jello salad as well?
