Chicken salad: discuss

DH invited a coworker for lunch. I have never met this person but there are no restrictions or allergies. DH asked me if I could make chicken salad for lunch (with some sides etc - it's a lunch his parents enjoy that they request).

Without further comment, I would like DCUM to discuss chicken salad as an option for lunch for company.

Sure. Serve with fruit, rolls and dessert. I make a version with grapes, celery, mayo and curry.

I used to like it, I’m not sure I would serve it for lunch for guests unless it was a ridiculously hot day and then it may be allowable. There are many other dishes I would go with that would be classier. However, if your DH has chatted this up as a main attraction, then you must make it. Pair it with excellent artisan breads and fantastic lettuce and condiment choices - arugula, frisée, radicchio, fresh plum tomatoes, etc fancy condiments, and expect them to eat it open face with silverware. Serve as a scoop on a large butter lettuce leaf or in a hulled out artichoke, on chilled china plates with silver. Tablecloths and linens napkins and crystal, to elevate the humble chicken salad.

Chicken salad sandwiches?! It’s a classic, easy, non fussy. Could be bad or good. Please avoid celery.

Are we talking a tossed salad or Caesar with chicken added, or the chopped up chicken with mayo dish that’s often put on a sandwich?
