What’s for dinner this week?

We made a double batch of pork and sauerkraut soup for a potluck tonight thinking we'd leave with plenty of leftovers for a weeknight dinner....nope. People liked it! Might be able to stretch it if we serve the remainder over egg noodles.

Other plans:
Pizza and salad
Green curry with tofu and vegetables
Leftover beef and lamb, roast vegetables, baguette

That doesn't quite get us to the end of the week but we have a fairly full freezer and pantry. Might do pasta e ceci, chili, or mujadarra since we don't have beans on the menu yet.

In the past I have made red beans & rice (this includes sausage), gumbo, or jambalaya. Those are the things I miss, probably in that order, from living in New Orleans. Well, dinner items anyway. I miss beignets with iced cafe au lait most.


They just don't taste the same anywhere else!!!
I crave a good muffuletta from time to time.

Tonight: sushi takeout
Tomorrow: meatloaf with side of peas (no one eats potatoes in my house)
Rest of week: salmon with rice and gochujong sauce, grilled steaks and burgers, and leftovers.

I’ve got leftover Mississippi pot roast, and I’m going to use the meat to make burritos tonight.

Tomorrow I’m making lasagna (just DH and I so I make small ones in a bread loaf pan).

We do a lot of "semi-homemade" type meals for lack of time, using frozen items like garlic bread and chicken cutlets and pie crust for quiche, canned beans, jarred salad dressing/ marinades, and store-bought hummus and rotisserie chicken.

Baked chicken breasts marinated in Greek dressing; garlic bread; Italian salad; apple slices

Enchiladas with leftover ground beef and rice, plus spinach, onion, refried beans, and Mexican cheese; orange slices; cucumber slices

Pasta marinara with Parmesan cheese; steamed broccoli with butter; mandarins

Chicken patties from the freezer on buns; carrots and cucumbers with hummus; grapes

Simple quiche (eggs, cream, salt and pepper); Italian salad; fruit salad with yogurt and honey

Freezer meatballs with homemade Swedish dressing and parsley; baked potatoes; orange slices

Leftovers

Dessert has been Girl Scout cookies because we just got a shipment from a niece.

What we actually ate so far:
-homemade bread, marinated and roasted chicken quarters and vegetables
-ordered jerk chicken from a new place
-homemade Philly cheese steaks last two nights (the shaved beef doesn’t keep well), with a fruit plate one night and salad the other

On deck:
-I got some decent looking eggplant and will be making moussaka, which should last two dinners supplemented with a side
-Malaysian style curry, protein tbd

These meals are very similar to what we like to eat. Simple, fresh, and tasty. I haven’t made Swedish meatballs or quiche in a while; I’m adding them to next week’s menu.

I made red beans with sausage over rice. And I added deviled eggs on the side. Lots of “trinity” vegetable blend in the beans, so a pretty well-rounded meal!
