- Three mushroom thai salad for starters, Penang curry with chicken and veggies, rice.

DD16 lately makes requests, which I love:
—she wants me to try to make chicken lo mein. So that is planned for the snow day.
—she also asked for a red curry with salmon and shrimp, which I have in my freezer, so just need some coconut milk.
—also she likes flatbreads with leftover meatballs and mozzarella, so I have some yeast and will make that tomorrow since it’s a day off school.

It is helpful to not always have to think about what to make! Does she help? I’ve been getting my kids (15 and 17) to help

I made some enchiladas with homemade sauce last week so I'm using the leftover sauce to make chicken tortilla soup. That will last one dinner and a couple of lunches. Tonight I'm making Mississippi pot roast with potatos which will be 2 dinners. Will make mushroom risotta in the instant pot later in the week. That will carry us for the week.
