What’s for dinner this week?

Okay, this has inspired me to think.

I will do black bean soup, turkey meatballs, and will check out the Crispy Tofu and Cabbage Stir-Fry (NYT) recipe!

I am making waffles and scrambled eggs tonight.
Later in the week jambalaya (budget bytes recipe), beef & broccoli, and salmon croquettes with mashed potato and some kind of vegetable.

I'm the pp who was going to do the NYT sweet chili tofu grain bowls, but might try this instead. I love cabbage.

Can someone please share an Eggroll in a bowl recipe you like? There seem to be lots of variations out there, and most have bad reviews.

This is the base recipe I use: https://www.budgetbytes.com/beef-cabbage-stir-fry/

But you should tweak it to your tastes. I usually do ground pork or turkey instead of beef, and stir in a little duck sauce at the very end to add sweetness and make it taste more egg roll-y. You can also use coleslaw mix if you don’t feel like shredding a ton of cabbage.

Breakfast sandwiches with fruit and hash browns
Mashed potatoes with roasted vegetables and chicken or veggie chicken
Leftovers one or two days

She helps on the weekends and lots in the summer. Her sports practice is right at dinner time during the week.

All are homemade. We always cook at home, very rarely eat out, mostly on vacation.

Pumpkin protein waffles (Kodiak mix with canned pumpkin) and apple-cranberry sauce
BBQ chicken sandwiches and coleslaw
Mushroom bourginon and mashed potatoes
Grain bowls with pinto beans, peppers and onions, and cheddar cheese

I use ground pork and the coleslaw in a bag. I use extra ginger and garlic.

I’m also making cabbage stirfry, but not the same recipe that pp listed, but I will make that another time! Thanks for sharing pp.

Quesadillas with chicken and peppers and onions

Chicken and wild rice soup (not the creamy kind, just like chicken noodle, but with rice instead)

Tonight we had kale Caesar salad.

If there’s not enough leftovers I will make something with ground beef or breakfast for dinner one night.

Usually on fridays we have ramen or salad.
