What’s for dinner this week?

Tonight is white chicken chili - I need to pick up some mango salsa on the way home and will probably do a quick batch of cornbread to eat with it.

Thursday is leftovers.

Friday is a Giada shrimp and rice dish, with a sumo orange salad (it's sumo season!)

Saturday is the Milk Street lomo saltado, which will be served with french fries (just from frozen) and a Peruvian salad I found to go with it, since the saltado is a Peruvian recipe.

Sunday dinner is at my mother's.

I made an Italian Cream Cake on Monday, so that should have us covered for desserts.

We had sheetpan chicken thighs with quartered gold potatoes and carrots this week.

Tonight is roasted pepper salad with a rotisserie chicken.
Chicken salad and soup for lunch from the rotisserie chicken.

So far this week we’ve had-

roasted chicken, potatoes and veggies

sheet pan chicken fajitas (I preslice/marinate all so I can just pop in the oven when I get home)

chicken tortilla soup (made with leftover chicken from Sunday) with cornbread (heated from frozen)

roasted salmon and broccoli, with boxed rice pilaf

spaghetti and meatballs with caesar salad (all compliments to TJs 😊)

tomorrow night will be pizza

- Baked potatoes with the usual toppings plus leftover shredded beef and broccoli
- Chicken, peppers/onions, chickpeas, cauliflower in the Wegman's curry simmer sauce served over rice
- Trader Joe's baked cod pieces (in their frozen food aisle) with mac n cheese (actually fusilli pasta in a cheese sauce) and roasted asparagus

pork tenderloin with roasted fennel, potatoes & onions.

Grilled sliders with aioli & onion jam

Spanish tortilla and green salad

Chicken and Spanish chorizo paella

Veggie chili on Frito’s with cheese, sour cream, and onions

Loaded baked potatoes

Oven-barbecued chicken (Pioneer woman recipe)

Pasta with sun dried tomato pesto and meatballs

…and we have a green salad almost every night

I have a bunch of carrots and celery in my fridge so I will probably make either chicken or beef stew tomorrow night (depending on which meat looks better), and pick up some crusty bread to go with it.

Spring break begins with college kid - so it’s Malaysian curry with a cauliflower and purple cabbage I’ve been saving. Then, she gets to decide.
